Coconut oil is not a trams fat. It's a saturated fat. Good stuff as long as you don't combine it with a lot of processed foods.

Oh gosh!
I am of the mindset that low carb, butter, coconut oil and avocado oil and whole milk are the best.
But I don't eat grains sodas sugars etc.
I have great cholesterol! Haha.
But I would follow your docs instructions on this one regarding the other fats.
Personally I think coconut oil beats margarine anyday.

Interesting article catgirl -
The Mercola article - on safflower oil
Around this time the edible oil industry began to denounce all saturated fats and heavily promote polyunsaturated fats such as canola, soybean, safflower, corn, and other seed and nut oils.
However, these oils easily become rancid when exposed to oxygen and produce large amounts of damaging free radicals in the body.
What is not commonly known is that these oils can actually cause aging, clotting, inflammation, cancer and weight gain. You can read the article "Secrets of the Edible Oil Industry" for more information.

TerryK,
Exactly. I can taste the rancidity, it burns in my mouth, and upsets my stomach and makes my nose congested.
I quit using vegetable oils for cooking...mostly I use butter, or do without the fat altogether.
If I wasn't allergic to coconut, I'd use coconut oil too for cooking.
