Hi Gigi
The refrigerated sauerkraut and pickles are the best.
On the ingredients, it should say cabbage, salt, water. Or cucumbers, salt, water.
Sometimes there is a preservative added. That is OK. I am infusing right now-can't go to the fridge to see.
Vinegar or wine on the ingredients is bad.
The liquid in the pickles and the sauerkraut should look cloudy, and will be in the refrigerated section.
Polish delis will also have "sour pickles" and sauerkraut made with just salt and water.
