I think Dave Mayo makes some excellent points in this video.
I watched most of this and my take away is that he believes most of the issues with high Oxalate diet are due to type 2 diabetes or hyperglycemia increasing Oxalate absorption.

We know Oxalate absorption can increase by 50 percent with increased glycosylation. We have studies on this. .

I ate a super high Oxalate diet for over 3 years before it really got to me. I bet I ate 3000-4000 mg a day of Oxalate from diet.

I developed anxiety and insomnia , which I attribute to the super high Nitrate content in the spinach. The nitrate content in a few cups of spinach far exceeds limits set by the EU.

I also worry about the super high cadmium content in Calif produce especially spinach. Growers in Salinas County are under mandate to reduce cadmium levels in their produce. The oxalate sucks the cadmium from the soil into the plant.

I developed Graves’ disease on this diet. Terrible skin. Droopy eyelids , lack of energy. Stiffness all over. Brain fog. Fatigue. Frozen shoulder. Tinnitus. And a large gallstone.
ALL GONE NOW except the tinnitus. Thank God it’s much quieter.

My situation got dramatically WORSE when I added the fruit kale smoothies. I immediately developed ice pick pains in my knees from the smoothies. And my right arm seized up. ( frozen shoulder ).

I worked with Karen Hurd after I had a horrific gall bladder attack and she didn’t believe the kale or the spinach gave me the stones.

She believes it was all the fruit in the smoothies —-and I tend to agree to agree with her. All that fruit sugar loads directly into the portal vein and contributes to fatty liver and type 2 diabetes.

Monique Attinger - chnc also provided some great info about dangers of smoothies / juices due to increased solubility of these liquified foods.

Karen Hurd was also extremely anti smoothie due to the sugar from the fruit dropping a load on the poor pancreas.

I do think however Dave is missing some of the anti nutrient properties of high Oxalate foods.

They contribute to calcium and zinc deficiency and I would even go so far as saying they contribute to heavy metal toxicity. Bill Shaw from Great Plains Labs points this out in one of his interviews:

Dr Stephanie Seneff also called out the fact that Monsanto added Oxalate to Roundup in 2006 to make it more powerful against pests. She calls out that Roundup chelates manganese and creates a deficiency which gravely affects our microbiota. ( shikamate pathway for gut bacteria ).

There are many studies which show that Oxalate is a Mitochondrial toxin. It inhibits key enzymes in Pyruvate metabolism. I don’t know if Dave covered this ? We can end up with biotin deficiency as a result.

Dr Angela Stanton has also shown some excellent info on how zinc absorption sharply declines with Oxalate and phytate in the meal.

Chris Masterjohn also called out the importance of eating high zinc foods AWAY from foods like this to maximize absorption of zinc

i think Dave has some wonderful points we should take seriously.

However —
I believe that anyone with a history of gut inflammation, strep , antibiotics use , PEMT variants , gall bladder issue , low calcium in diet for whatever reason such as can’t eat dairy — should limit or eliminate high Oxalate foods forever.
There are plenty of low to medium Oxalate vegetables we can enjoy.

I believe high Oxalate diet is an impediment to Healing the gut. We know the sharp crystals also damage the gut lining.

We have reports of cattle dying after getting into fields of sorrel and ingesting too much.

We need to recognize these risks and keep these foods to a minimum.

I think this diet is based on the marketing genius of vitamix and some misguided folks who believe large amounts of raw vegetables are good for us.

These big Agra folks knew what they were doing. They were minimizing losses. They selected these vegetables to grow specifically because they are so toxic to pests.

They may be OK for us if we are using them to replace super sweet or sugary crap diet. But fruit smoothies and high Oxalate vegetables — no.

There are really not that many high Oxalate foods we need to avoid or minimize. . Spinach , spring mix , nuts. Beet greens and a few others like heavy amounts of tomato sauces. .
The rest are OK in moderation.

I still eat salads. But not as the main meal. I eat romaine and not spinach or spring mix. I select lower Oxalate beans like butter beans.

I think there are many very good reasons to avoid high Oxalate foods.
