One great thing about this recipe is the zero need for sugar or any other sweeteners that can confuse the pancreas and the brain and then trigger cravings.

insert edit: oops. I see she calls for "vanilla yogurt" and that is often loaded with sugars that I'm sure are not accounted for in her totals. Be careful to buy one with no added sweetness.

The best Greek Yogurt I've found is Straus Organic pastured whole milk Greek Yogurt. I think it's a California dairy. Pastured dairy (and meat) has nutrients better for us, when that is possible to find. Better omega 3 to 6 ratio and better CLA profile.

It's very thick and while it has some natural carbs from the milk, because it's so thick, the carbs are pretty low. But keep that in mind, check the total carb content of any brand you buy. (end after thought edit)


With distinct flavors of lime & coconut, there's a richness. The Coconut Milk, alone brings the sweetness and the good fats add to the mouth-feel & satiety.

Be very careful with brand of coconut milk, though, some contain all kinds of thickeners / carbs that can trigger spikes in blood sugar and then spikes in insulin that follow.

I'll have to check my "study" notes on this. I found one that is "clean" but forget.


Coconut Lime POPSICLES

Ingredients:

1½ cup vanilla Greek yogurt

¾ cup canned coconut milk (full fat)

½ cup lime juice (fresh is best)

Zest of 2 limes

Directions: Combine all ingredients into a blender and blend until smooth. Pour into popsicle molds. Freeze 1 hour before you add the sticks. Freeze until solid.

Makes 12. Figure 4.5 carbs, 56 calories each

Glad you think so. I sure did. Like a faux frozen margarita.

Almond extract, instead of lime, comes to mind as another option.

Or a drop or two of Orange extract? What else goes with coconut?

I cannot find in any of my most logical files my notes on the best coconut milk. There was one that was really good with nothing added. Full fat, real, matters and in many "Lite" varieties, they just give you a little bit and lots and lots of water.
