Can you herx from cutting back on sugar? The last 3 days I have cut out sugar but for my coffee. Today I really felt bad. Never have tested positive for co infections but was thinking it might be Candida dying off from lack of sugar is that possible? I was eating a ton of sugar.

Yes, probably candida die-off...
Molybdenum supplements can help...

You could do a step-down diet - cut out sugar but eat sweet fruit. Then when over the sugar craving, gradually eliminate the fruit.
You could also experiment with sugar substitutes in the coffee - stevia, lo han, xylitol. I tried them and don't like them, but some do.

Stevia (pure, NOW brand) works for me for coffee. It is extrememly sweet so just a teensy bit is enough.

Have tried stevia before, has a after taste I don't like. I have cake and brownies sitting on the counter driving me nuts.

The liquid stevia tastes terrible. I've had good luck with the powder packets like sweetleaf brand.
