Long story short it doesn't. Coconut oil is a very healthy fat. It's probably the best oil to cook with because it doesn't break down at high temperatures like olive oil does.
Actually, the Framingham Heart Study has found that eating a high-fat diet has no impact on cholesterol, contrary to conventional wisdom. On the flip side a number of studies have found that high-fructose corn syrup and high-carbohydrate diets increase cholesterol. Eat good fat, don't ingest sugar (particularly fructose), and limit carbohydrates to bring down cholesterol.

People including those here have believed incessant advertising about the "dangers" of fat so it seems they pretty much avoid it.
It is an essential nutrient. The brain, nerves, hormones and more use fat in their construction.

HFCS also is tough on the Liver. Avoid it like the plaque. It is the single biggest cause of obesity.
There really is nothing good about it, and it is considerably worse than sugar, which is not exactly a health food either.
I agree that Coconut Oil poses no known health problems. It is better than most any other fat.

You might be right there canefan.
It is described in some new science articles that many organisms use cholesterol for defense, etc.
But it is sure going to be a long road to get doctors to believe for even one minute that
elevated cholesterol is a indication for disease. For now I'll quietly eat my coconut.

And, you don't get fat from eating more fat. It helps keep you full longer. The surest way for me to need more food in a day is to try to eat low fat! Low fat for weight loss isn't true!
