My opinion: The stress of the food poisoning and the other things you cited caused a huge flare in your LD symptoms. The symptoms are all Lyme/coinfection symptoms. I can't tell from your post - are you treating for Lyme or not?
If you ARE treating, you're herxing. If you AREN'T treating you're having a huge flare. You may have been in remission, but not cured.
Lyme goes dormant, only to rear its ugly head following a stressful event: surgery, accident, death of parent, putting Mom in nursing home. I've had all your symptoms. I've been treating 2 1/2 years now, getting stronger. But Mepron is kicking my butt with herxing - every night I get the chills.
Years ago before my diagnosis, I developed swallowing difficulties when I was totally stressed out having to put my Mom in a nursing home. As soon as she was safely placed, and my dad was OK with it, my swallowing was back to normal.
Stress = stirring up the borrelia hornets' nest = flare.
That is my take. My suggestion if you can't afford an LLMD, follow the Buhner protocols with herbals. I am convinced now that they can be effective. latest study by Eva Sapi at Univ. of New Haven shows Samento and Banderol very effective, way better than doxy.
Hope things improve for you. -Paulie

GI infection with Lyme relapse.
GI infections are very dangerous. Start there. Any good GP should put you on a broad spectrum antibiotic and antiparasitic.
Don't let the doc turn you away. Food poisoning is often considered "self limiting," meaning it resolves on its own. This is not true. The acute symptoms may resolve, but the pathogen remains. In your case, the symptoms didn't even fully resolve!
Once you've treated the GI bugs, you'll know whether or not you need further Lyme treatment.
I suspect your immune system has been very weakened.

Food allergies to everything? Sounds like a gut issue.
For what it's worth - drinking mangosteen juice caused my sinuses to run and my intestines to be regular again.
Cervical chiropractic adjustments help me be able to swallow comfortably.
My advice - don't allow yourself to become totally overwhelmed. Read the suggestions here and try little experiments with any of them to see what may ease your symptoms.

I also think treating for parasites would be a VERY good idea. There are several antiparasitic herbs that are very good and inexpensive. I am currently using Parastroy and buy it at Vitacost.

P. S.
Google parasite symptoms and i think you will find the symptoms you have described.

So what have you done? It would help us make better suggestions if we knew.
