Just bought a bunch of bulk herbal powders and I'm waiting for an encapsulation machine. Can I just put them in water and drink them down until my encapsulation machine comes in the mail, or will there be zero benefit?

Mixing the herbs in applesauce might be more palatable. I mix my herbs that way, and it works fine.

i do water. I do warm water, then put the herbs, then I gulp it down like a shot. I kinda think its the best way.

Mixing with water works fine - try to swish and 'chew' the sludge in your mouth for about 5 minutes before swallowing to absorb the compounds systemically.
