Thanks for posting! It makes sense to me. Over the years I have gone grain free for very long periods.
I found doing so reduced the TOTAL LOAD of assaults on my body thus reducing symptoms of food, inhalant and chemical allergies. I also think it reduced my inflammation and I just flat felt better.

It makes sense in many ways... I just didn't want to admit it to myself since I love bread, cake, pasta & all those nasty carbs. Even brown rice & healthy stuff...
What do you eat for breakfast? I love my toast or a muffin & coffee... Somehow, eggs & spinach doesn't seem as fun. I'm going to try to phase this type of diet in gradually.
Any recommendations for receipes?

I personaly think moderation is the key. Sparkle, when you said "I love my toast or a muffin & coffee" it is very telling.
Some things are just good for the soul. If it's not life threatening, keeping some things that we just plain enjoy can be soothing and healing.

Here is method from Nourishing Traditions cook book,
To soak beans and grains. Dr. K. likes this diet...
Breakfast: Eggs Yam, Sweet or Winter squash (prebaked and left over) Green vegetable (left over broccoli, etc) Flax oil
Something more exotic for once in a while: Clean bacon Almond flour pancakes, muffins, cobbler etc Grain free waffles (homemade)

Thanks Gael! Also thanks lightfoot & Kristen... I watched the video. It's interesting stuff. I'm going to try to ease some of these things into my diet. I don't think I can give up pasta, dessert & sandwiches just yet.
I'd like to bake more but sometimes I barely have the energy to cook the regular stuff.

Coconut flour isn't really flour, and you can make many things with it.
I found this recipe, but haven't tried it yet. Coconut Flour Waffles 4 eggs 1 teaspoon oil (coconut) 1/4 teaspoon baking soda 1 teaspoon vanilla 1/4 teaspoon cinnamon 1 teaspoon honey 2 Tablespoons coconut flour
Mix and cook using a waffle iron. Makes 4 waffles.
The coconut flour absorbs lots of liquid, so that's why you use so little.

This is her earlier version......we like it the best. It's important to use a small loaf pan. I use honey or maple syrup rather than agave.
Gluten Free Simple Bread 2� cups blanched almond flour � teaspoon Celtic sea salt � teaspoon baking soda 3 eggs 1 tablespoon agave nectar � teaspoon apple cider vinegar
In a large bowl, combine almond flour, salt and baking soda
In a medium bowl, whisk the eggs, then add agave and vinegar
Stir wet ingredients into dry
Scoop batter into a well greased 6.5 x 4 inch loaf pan or 7.5 x 3.5 inch loaf pan
Bake at 300� for 45-55 minutes (or 350 degrees for 30 minutes) on bottom rack of oven; until a knife comes out clean
Cool and serve Makes 12 slices
(It works best to chill it completely before slicing......holds together better.) ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Her second version....
Gluten Free Sandwich Bread 1 � cups blanched almond flour � cup arrowroot powder � cup flax seed meal � teaspoon Celtic sea salt � teaspoon baking soda 4 eggs 1 teaspoon agave nectar 1 teaspoon apple cider vinegar
In a medium bowl, combine almond flour, arrowroot, flax meal, salt and baking soda
In a larger bowl, blend eggs 3-5 minutes until frothy
Stir agave and vinegar into eggs
Mix dry ingredients into wet
Pour batter into a well greased 7.5" x 3.5" loaf pan
Bake at 350� for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean
Cool and serve
Makes 1 medium sized loaf of gluten-free bread

KPU/HPU is a major cause of Leaky Gut. You are lacking certain very important minerals and enzymes. Of course, you can't eat certain things without certain digestive aids - minerals and enzymes. KPU is easily corrected by taking CORE, the missing substances. Many threads talking about KPU on LN.
Avoiding foods is not the longterm answer eventually leading to more deficiencies.

I don't think I have leaky gut. I was tested for it a while ago & it's not a big thing for me. I'm not very allergic to most things.
I like the idea of trying different foods, though. I don't think we have to only have one idea of diet & that it has to be a faschist thing - like no sugar - or no meat - dairy - (fill in the blank) or only paleo foods, raw foods, macrobiotic, etc...
It's just interesting to think about the concept of diet & how it works. I think people are very adaptable. It's hard these days because alot of toxins are being put into the foods we eat.
I don't think it's a bad thing to omit wheat or dairy or soak beans for 12+ hours with some vinegar... It's not that hard to add different ideas into our diet if/when possible.
I used to think soy was a panecea (FYI - I was wrong!) - so, concepts of diet do change.

It's a matter of choice. Sure, I can est anything I want but do I really want to?
Diet plays a much larger role in health and well being than most of us realize. That's why athletes who are in tip top shape and health pay very close attention to what fuels their body most efficiently.
Regardless where we are in the treatment journey and life, It makes a very big impact. AND better than that it is something one can implement today without outrageous expenses.

I am so confused about diet. I was reading dr B,s protocol (sorry memory is bad at moment). So I completely cut sugar. I thought being gluten free was good enough,but I guess not.
I am not sure what is carbs and what is not. I was told to cut carbs but i am not sure if any breads are okay or not. Is coconut flour carbs? I ve been eating udi,s whole brown rive flour bread from the frozen food section.
