So, while on Flagyl or Tindamax:

I know drinking alcohol (ethyl alcohol?) is off limits, but what about sugar alcohols?

I'm noticing xylitol, erythritol, glycerol etc. in many products. Do these also produce a disulfiram-like reaction?

No you should be fine. I took the BW tinctures with tindamax and was fine.
