My ears will be "fine" / normal and then all of a sudden one or the other will get hot and red...the very tips in particular.
I've always thought this was a Lyme thing. But what do folks think. Is this Lyme, or other co-infection? Or is it adrenal, hormonal, etc??

For me, it's the Mast Cells...might also be from eating high histamine foods?

Yes, and I believe it is indeed mast cell related. It's nowhere near as bad as it once was -- Lyme treatment calmed that way down.

Sometimes that is normal for some people even when they are healthy. You can see it in little boys easier because of their short hair.
It "could" be an innocuous circulatory disturbance.
