I am currently blessed to live in California, where I understand the Lyme climate is pretty amazing.

We are thinking of moving to either New Mexico or Arizona, and I want a list of docs so I can narrow it down, as well as whether or not either state is LLMD/LLND friendly.

Check Support Groups on the left side of the page. There is one for Arizona and they provide doctor referrals. There are none for New Mexico.
