Hey does anyone out there have good and yummy recipes that are safe for us with Lyme? I'm at a loss. I'm not really a cook so I need help.

Snacks and things that can be frozen for later too. Anything is appreciated.

Hi Messa. Can you eat nuts? I know nuts are a really great thing for many people with Lyme to snack on. I myself have been eating a lot of hummus lately.

I started making this quinoa pilaf thingamajig lol a few nights ago and its really good.This is a recipe that can yield approx 6 servings :
1/2 cup each of carrots, celery, green and red pepper
2 cloves of crushed garlic
1/4th teaspoon of oregano
6 cups of cooked quinoa
1/4th cup of olive oil.

You saute the veggies in olive oil til they are crisp, then stir in oregano. Then add the veggies to the cooked quinoa, and mix them well. sometimes I have baked chicken w it as well.

I got some really cool recipes off the web sent to me by a friend. Quinoa.net has some really good options. i am far from an amazing cook, really I am a baker. I bake fab cheesecakes and pumpkin pies that I ca no longer eat lol, but this is an easy recipe anyone can do.

Blueberries, coconut milk, plain greek yogurt if you eat it, stevia, vanilla, and ice in bullet blender.

It is a great smoothie. I am wondering if yogurt is OK. But you can make it without it if need be.

My recipe's are very limited at this point.

I have a chicken thigh, brn rice, creme of something, frozen veggies dish that I bake in the oven.

I need to keep recipes to a few steps.

Now, taht is hot out, I need to find something that does not use the oven.

Tried crock pot but not sure why that is not working out. Crock pot seems to cook so hot even on low.

yams baked in the oven

caregiver cuts butternut squash in half for me and takes out the seeds. Then puts it in the frig in the glass baking dish.

When able, I put it in the oven.

Again....not summer dish.
