Hi Messa. Can you eat nuts? I know nuts are a really great thing for many people with Lyme to snack on. I myself have been eating a lot of hummus lately.
I started making this quinoa pilaf thingamajig lol a few nights ago and its really good.This is a recipe that can yield approx 6 servings : 1/2 cup each of carrots, celery, green and red pepper 2 cloves of crushed garlic 1/4th teaspoon of oregano 6 cups of cooked quinoa 1/4th cup of olive oil.
You saute the veggies in olive oil til they are crisp, then stir in oregano. Then add the veggies to the cooked quinoa, and mix them well. sometimes I have baked chicken w it as well.
I got some really cool recipes off the web sent to me by a friend. Quinoa.net has some really good options. i am far from an amazing cook, really I am a baker. I bake fab cheesecakes and pumpkin pies that I ca no longer eat lol, but this is an easy recipe anyone can do.

Blueberries, coconut milk, plain greek yogurt if you eat it, stevia, vanilla, and ice in bullet blender.
It is a great smoothie. I am wondering if yogurt is OK. But you can make it without it if need be.
