I know, kayak. It's been almost a year now since I began SERIOUSLY on my cooking. It's hard work, but as I got better, it got easier. I guess it won't be "easier" for you any time soon.
Remember not to eat too much fruit. You are going to have yeast issues from cancer treatment and from abx with the surgery. So WATCH OUT!!

lpkayak- Good for you! It is hard trying to eat healthy. The doc that cured MS, think her name is Terry, I saw that thing on youtube and tried it as well.
The problem is, that by the end of the day, when I get home from work, I barely have enough energy to lift my arms. Chopping veggies is out.
I think I need to invest in a food processor. So I can throw cabbage etc. in there and let it do all the work.

Terry Wahl also took antibiotics and other drugs to get well. I read an article that listed all of her treatments. She makes it sound like she cured herself by eating vegetables. Not true, but still a good thing to eat!!
Zucchini, squash, broccoli are easy to cut!

Are you eating your food raw?
If not, the crock pot is wonderful when you don't have a lot of energy or find standing or sitting upright for long periods to be difficult.
To kill pathogens that might be on food, fill sink with water, add nutribiotic drops (grapefruit seed extract), and soak the food in this for a few minutes.

Wow!! It sounds like you are doing an amazing job eating well after all you've been through and are dealing with!!
My suggestions:
A crock pot is good!
And sometimes I make something I call "squish soup"- where I throw whole vegetables and spices in boiling water and just squish what's in there when it gets soft. LOL. I can't cut anything anymore so I have to be creative.
As far as groceries, we got a CSA this year so only had to go to the farmer's market once a week to pick it up. But I have somebody who can pick it up. I know some CSA's in our area deliver- maybe one near you does and you could look for next year?
And when I have to chop stuff, I put on my noise cancelling headphones and send it through the food processor.
