I've been thinking about the fact that eating healthy is so important when you have Lyme.

Unfortunately when you don't feel well, the last thing you want to do is cook (at least me). I never was that great in the healthier times. And going to the grocery store is an ordeal.

Does anyone have any suggestions and/or easy recipes for us Lyme people that don't feel well enough to cook, etc?? My husband is wonderful but since he works late quite a bit at times, I never know what we're doing. Plus my appetite isn't that great.

I do manage to get breakfast down in the a.m. but I have always been a healthy breakfast eater.

I have a George Foreman grill.... end of story!!!!

I grill just about everything I eat. Then I fix vegetables. That's it. Pretty simple!!!

I do not eat potatoes or other starches.

Hey, thanks for the reminder TuTu. I tucked my George Forman grill away and forgot about it. I'm gettin' it out today. I love that thing!

Mellow white miso soup with some flat leaf kale or other greens chopped and added into it is super easy to make.

Follow the directions on the miso tub but do not cook it on a high heat or it kills all the good bacteria.

I am dead against eating too much soy but I think a bowl of miso soup once in awhile is different then downing a ton of soy milk or eating tofu too often.

I got a toaster/egg poacher from Walmart.

I put in a slice of gluten free bread and an egg and both are done at the same time.

I also eat a lot of salads. I purchase the organic mixed greens, add tuna salad on top or chicken salad.

I get the chicken salad from the deli at the grocery store...I do not have what it takes to make my own yet.

Had a frozen turkey loaf or something that all I had to do was bake in oven tonight.

Purchased frozen cranberries, add aguave for sweetner and boiled cranberries for 10 min.

I also had a yam but didn't have what it took to get it cookd tonight too.

If I think of more, I will let you know.
