Something I could adapt since I'm gluten intolerant?

Ground turkey recipes too, please!

Canned soups are out for me, but others might enjoy your recipe! So fire away!

meatballs, carrots ,peas, potatoes in crock pot
cook meatballs first.
premade meatballs are great but have filler.
just put egg and little ketcup and onion mix or not
and make balls
stuffed meatball in green peppers bake
rice optional

meatballs and cabbage
corned beef and cabbage
spaghetti squash and meatballs very good
bake squash cut in half
use fork scrape lenghtwise in cooked squash.
squash will look and taste like spaghetti.
well you can imagine it but still good.
use bottled sauce.

Something really, really fast, but good.

Sloppy Joes

1 onion, diced
1 or 2 lbs hamburger, fry in skillet w/onion, drain fat
l cn Chicken Gumbo soup (do not add water), mix with drained hamburger (sorry, it is a canned soup)
l/2 cn rotel, drained
hamburger buns (we use onion buns)
I also add garlic powder.

Taco Salad

When I am able to cook the ground beef

Use organic mixed greens

put the cooked ground hamburger on it

Add avocado slices and other salad fixins

Black olives

green onions

salsa

tomatoes

can't recall what else

My family enjoys a thick Quick Vegetable Soup
So healthy, too. It's a meal in a bowl.

Brown ground meat with diced onions (dried onions are easier)and a little salt and pepper. Drain well on paper bag covered with paper towels.

Combine in large pot:
Canned petite diced tomatoes with juice
Beef buillion cube or two (depending on amt of soup)
Bag of frozen soup or mixed vegetables (or canned)
Frozen sliced okra (especially if you're a Southerner)

Salt and pepper to your taste
Dried Italian seasoning
Just enough water to cook vegetables till done.

Add:
browned meat
V8 juice for liquid and vitamins
Heat through, serve and enjoy.

Optional:
Add diced canned white potatoes, pasta, rice, or whatever combination of ingredients you prefer. Sometimes it depends on what I have on hand. May add left-over cooked vegetables.

Good with corn bread, corn muffins, garlic bread, soup crackers, etc.

I think it's even better the next day, so I plan left-overs.

Hint:
Buy ground beef when on sale.
I brown all of it (without onions).
I fix a meal and freeze the rest in approximately 1 lb pks for easy suppers with little clean-up.

If the meat is cooked, you can throw together a meal in a hurry: lasagna, spaghetti, stroganoff, etc.
It does not keep for long periods of time in the freezer.

Ground beef and potato scallop


-1 lb of lean ground beef
-4 tbsp potato starch
-10 oz can sliced mushrooms
-1 and 1/2 cups gluten free beef broth
-1/2 tsp garlic powder
-4cups thinly sliced peeled potatoes
-1/2 cup thinly sliced onion

1. Stir fry ground beef in a large greased frying pan over medium heat until no longer pink

2. Drain meat, spinkly with potato starch, salt and pepper, and stir

3. Spread meat mixture in ungreased 2 quart casserole.

4. In a large bowl, mix mushrooms, broth and garlic poder.

5. Add potato, onion and sprinkle of salt and pepper, and stir

6. Spoon potatoe mixture over meat.

7. Bake covered in a 350F oven for one hour.

8. Bake, uncovered, for 10-15 minutes, until top is starting to brown and potato is tender.

Serves 4


Spicy Beef and Macaroni

-1 lb ground beef
-2 cups water
-1 medium onion, diced
-2 cups GF elbow macaroni
-1 green pepper, diced
-1 cup GF barbecue sauce
-1/4 cup grated parmesan cheese (optional)

In a deep skillet, brown the meat. Add the diced onion and green pepper.

Cook until tender. Stir in water, macaroni and barbecue sauce.

Cover and simmer until maaroni is tender, 6-8 minutes.

Stir in or top with cheese.

I like fajitas with onions and bell pepper, maybe some black beans, cilantro, tomatos, cheese and sour cream on top. Use taco seasoning. Easy to fix and yummy, especially with turkey burger. Even if you don't use tortillas, it's really good by itself.

Here's one. It contains a lot of cheese, but I have recently resurrected it from a bunch of old recipes. I promise to eat it only occasionally!! [Wink]

Enchilada Casserole

2 lbs ground beef [or turkey]
1 onion
2 tbsp chili powder
2 tbsp ground cumin
2 tsp salt [or salt to taste]
1 can Ranch Style Beans [I use plain beans]
6 corn tortillas
6 oz Monterey Jack cheese (1 1/2 cups)
6 oz cheddar cheese
1 can cream of mushroom soup (I just thicken with gluten free flour and water)

If you like spicy...
1 can diced tomatoes with green chilies

Cool ground beef and onion in large skillet until meat is browned and onion is tender. If necessary, discard pan drippings. Add chili powder, cumin, and salt and stir well. Cook additional 10 minutes.

Spoon meat into 13X9-inch baking dish. Layer beans, torn tortillas and cheeses over meat. Pour tomatoes and green chilies over all.

Spread soup over top of casserole. Cover and refrigerate overnight. Bake uncovered at 350 degrees for 1 hour.

NOTE: This can be frozen and also divided into 2, 8X8 inch pans if you prefer smaller servings.

(I use foil containers and freeze one)

Full recipe serves 4-6 people.

The person that gave me this recipe called it

Weight Watchers Chili

1 lb extra lean groundbeef (use any hamburger but after it's brown soak up the fat) Use a large soup pan.

1 can black beans
1 can pinto beans
1 can chili beans
1 can shoepeg corn
1 can diced tomatoes
1 can rotele tomatoes/green chilies

Add all these ingredients including the juice in each can, this will be your broth.

Add 1 pkg Hidden Valley Ranch dressing (dry/packet)

1 taco seasoning packet

Heat and eat. This makes a very good amount. It freezes great also.

Everyone that I've served it to now has recipe and have shared it with others. Talk about simple meals. Doesn't take a mental heavy weight or non-lyme brain to open cans and packets.

According to person I got the recipe from it's called Weight Watchers due to the good carbs and proteins in this dish. Even the shoepeg corn is young white corn that is suppose to be easier on the digestive system.

Here's an easy turkey chili:

1 large chopped onion
2 Tablespoons minced garlic
1/8 cup veg. oil
2 Tablespoons ground cumin
2 lbs. ground turkey
1 cup pearl barley
2 cups garbanzo beans (chickpeas)
6 cups chicken broth
1 teaspoon dried marjoram
1 teaspoon dried savory
salt/pepper to taste
grated jack cheese (optional)
green onions, chopped

Cook onion & garlic in oil until soft. Add cumin. Stir for 5 minutes. Stir in turkey until no longer pink. Then add barley, garbanzo beans, chicken broth, and spices.

Simmer 45 minutes.

Top w/grated monterey jack cheese and green onions.

Note: I just realized that barley has gluten. I have tried substituting rice, but it didn't turn out that well. I think you could make it sans barley, but just reduce the chicken broth by 1/2 to 2/3. Then spoon over your favorite gluten-free grain (cooked seperately.

I find stew meat is easier for me to digest, for some reason. I can let it simmer away and it nearly falls apart. But if I simmer ground beef it just does not become as tender for some reason.

Hi Lymetutu,
Sorry I missed your question.

I buy McCormick's Italian Seasoning (marjoram, thyme, rosemary, savory, sage, oregano, and basil).
I like to buy the dried mixture because I'd never use each one before it was stale.

The V8 is a more recent addition to the recipe, so it could be omitted.
Throw in another boullion cube or two for flavor.
Adjust the seasoning to your taste.

A lot of good recipes.
I'll have to try some of them.

Confession time....
What I cook is usually determined by how long it takes and how much it messes up the kitchen.
