I take about one tablespoon of ground flaxseed each day. You can increase up to two Tbsp.
Just get some organic whole flaxseeds and grind it yourself as needed. The whole seeds keep very well for a long time, but the ground seeds deteriorate quickly.
You can grind the seeds in a coffee grinder or a VitaMix. I grind some and keep it in a container in the freezer and just spoon it out when I'm ready to use it -- in smoothies, sprinkled on food (after you cook it), or whatever.

Should Chia Seed and/or ground flaxseed be kept in refrigerator?

Amen ! If not, it gets rancid easy. Do you use dirty oil when you change the oil in your car ? --------------------------------------------- DISCLAIMER: OK, the oil change example is mostly a guy kinda thing.

http://connect.diabetes.org/forums/Forum3841-1.aspx The above link is to the american diabetes association website eating right recipes forum. At the top is pinned "Barb's Baking Mix". I know I rely heavily on gluten in the posted recipe, but Ihave recently begun experimenting with Chia seed.
I think that one could possibly replace the wheat gluten flour in the recipe with chia seed meal. Or One could simply omit the wheat gluten and experiment a bit with the balance of ingredients. also somebody on the forums has a recipe for a flax seed muffin that one mixes right in the cup. it is made out of flax and egg, I think.
I have found a great source for good quality, great price chia seeds! I ordered five pounds and have already eaten over half.
