Short answer:

To save lives and give the treatment a chance to work. Really, even a trace of gluten can be very damaging for many lyme patients, for various reasons.

I'm sure you will get more detailed answers tomorrow.

Gluten causes inflamation, which we Lyme folk already have problems with.

It is also a factor in celiac, irritable bowel syndrome, and/or leaky gut syndrome.

A good book is "Life Without Bread" by Dr. Allan and Dr. Lutz

There is a new book that I haven't read yet, "Wheat Belly" by Dr. William Davis
