There are multiple reasons.

During treatment, it is important because the longterm use of antibiotics kills the natural bacteria in our system. The natural bacteria (flora) in our digestive system is necessary to keep everything in balance.

When the flora gets out of balance, there can be a yeast overgrowth. Yeast lives of off sugar. When you cut out all sugar, and foods that turn into sugar in the digestive system (wheat, rice, potato) then you starve the yeast.

A lot of people with Lyme just feel better when they follow a no or low sugar, low carb diet. I think a lot has to do with keeping blood sugar level.

A lot of us generally don't eat healthy. Increasing protein and vegetables are important to eating healthier. So cutting out sugars and processed carbs adds to that.

Personally, I no longer follow that diet. I did for the first two years of Lyme treatment. I had yeast problems in the past, and wasn't taking chances.

Unfortunately, I developed some GI issues and basically wouldn't eat if I didn't eat carbs. I'm trying to transition back to higher protein and lower carbs. I know it impacts my energy levels.
