Can I learn how to do a bicillin shot from Youtube and reading instructions?
The physician assistant totally botched my husband's first shot. I'm not sure if I feel comfortable learning from her.

Probably, but if you could find a RN to show you how to find the ventrogluteal site and aspirate the injection, you would probably be better prepared.
I think the instructions for the Bicillin indicate the dorsogluteal site, but I think that the ventrogluteal site is recommended more and more now since there is less risk of hitting a blood vessel or nerve there.
I think no matter what, it is going to be a bit of a nerve racking experience for you and your husband the first couple of times, I understand even nursing students get nervous the first couple times.
What did the PA do to botch the first injection?

The PA injected it into a vein. My husband started sweating heavily and almost passed out.
Does anyone know if there are long term consequences of that?

I don't know what the long term consequences are to injecting a vein with bicillin but I do know it can be dangerous and should be avoided at all costs. Really no reason to hit a vein if it's being injected in the upper-outer quadrant of the buttock. I keep an Epi-pen nearby when my wife gives me the shot just in case I have an allergic reaction to it. I have not had an allergic reaction to the shots but I do get headaches and sometimes I get sick (like flu) from it. It could be a herx, probably is, not sure.

I did it this morning. The internet is great!
It went very well, and he said it doesn't even hurt anymore. It hurt for days after the PA did it.
Inserting the needle does feel like putting it into butter. It was a lot easier than I thought. And I did do the harpoon thing, but a gentle harpoon.

Sounds like you did a good job Janice!
I'm still concerned about your experience with the first shot. Did the PA aspirate before injecting the bicillin? If they aspirated and had blood return they should have recognized that they hit a vein and immediately pulled the needle out. You should never continue with the injection if you hit a vein.
Always aspirate, draw back on the plunger to check for blood, before proceeding to inject the medicine. This is very important. I just wanted to emphasize this since your PA was such a poor example.
And as tcw recommended ask someone to show you (or look online) for the ventrogluteal site. I found it to be less painfull than the dorsogluteal site and you have less risk of hitting any major blood vessels or nerves in that area.
