I have been taking both together for liver protection since I am taking Mepron.
Could either of these be irritating to the stomach? Can I just take one and not the other?
What dosage is recommended if I am only taking one?

If you've been taking on an empty stomach, you might try them with food. A tiny bit of lemon juice (say, with your salads or other foods) can also help your liver to better metabolize.
Try a lower dose. It's always good to start with a low dose, just one thing at a time.
Yes, you could take these separately - at least for a trial run to see if one is more irritating than the other but they will work better together. You might consider adding slippery elm and prepare as a gruel (see the "One Earth" book mentioned below for details).
Bupleurum is another very good liver support. Usually, it's part of an overall formula. It may be that you need a more balanced formula.
Do you have some guidance from an herbalist, ND, or L.Ac.? From a book?
Look up Michael Murray, ND. He has several good books.
And Google search for "The One Earth Herbal Sourcebook" site. I don't think Burdock is there but Dandelion should be. Then search "LIVER" at that site for more detail.
