Have you been drinking lots of water with the Doxy? That is extremely important! Some have burnt their esophagus after lying down directly after taking the Doxy.. It's a drug that needs to be taken with food as well to prevent stomach issues.

If you are interested, you could try...
Lavender essential oil, 1 or 2 drops in a cup of water but no more (essential oils are strong).
Cooled chamomile/calendula (marigold) tea. Marigold is specific for burns, chamomile contains anti-inflammatory bisabolol. The essential oil will be stronger in this regard than the tea, more "cooling." You could also try the Calendula Oil by Weleda, this could help.
St Johnswort *oil* (not the extract) is a nerve anti-inflammatory. You could add it to the chamomile/calendula tea above. It *will!* interact with mainstream drugs and reduce the effectiveness of many of them, caution. Ask your doc. It' s possible s/he may approve small amounts of SJW oil but if s/he says it' s not a good idea, there are other solutions too.
Be careful with peppermint essential oil, it has some cautions. I would suggest the cooled tea instead, very very safe. You could also mix this with lavender essential oil as above.
Be sure to report these symptoms to your doctor, right away!!!!
best wishes and I hope this helps.

Is there anything white attached to the roof of your mouth? Does your tongue have a white film on it? This would point to yeast, but... I've had bad yeast problems and been on Doxy plenty of times and at different dosages and I've NEVER had that happen!

I found this article interesting on Burning Mouth Syndrome:
One of these conditions was Burning Mouth Syndrome (BMS) an idiopathic (unknown cause) condition characterized by a continuous burning and intense pain of the mucosa of the mouth, tongue, lips and oral mucosa. The pain is intense like youd experience after eating very hot peppers. It also feels like something is lodged between your teeth.
My mouth (inside cheek and gum) started burning and peeling suddenly today, too. Feels like it's being torched. Tooth roots hurt, too. Seems as though tissues are being digested. Strange taste.

I recently had the burning mouth problem-- roof of mouth peeled and bled + a slimy feeling. Tongue was very painful !!!
I believe this to be a yeast issue. I have been taking mega probiotics but they simply were not enough to stave off yeast after 8 months on ABX.
The way I got rid of it (besides taking tons more probiotics) was to dump the powdery contents of a probiotic capsule (2 x a day) right on my tongue...I then swished the stuff (very pasty when it mixes with saliva) all over my mouth and let it sit there for several minutes--- then added water-- swished again and then down the hatch.
It took about three days until I noticed improvement--- but it did work.
