babesia or Bartonella can both cause high turnover in red blood cells and this can cause MCV to rise. ( RBC are larger when they are new and become smaller as they age - so a shift to larger means more rapid cell turnover)
other abnormalities on the CBC are common also when this is the case. Bart in p[articular infects the bone marrow where the blood cells are made so drives many and varied anomalies - often a different one each time a test is run.
the B12/b vitamin levels will just be down to the supplementation you are taking - very common for these to be high if you are taking supplements
