Ham and Bean soup is my favorite,
right next to corn beef brisket or a small roast,,,makes GOOD sandwiches for the rest of the week.
You can even throw in your fav veggies for more complete meals.

I have been doing ham and bean soup for about 2 months now. It was hitting the spot but need a change.
Both the vegie soup and the corned beef brisket sound good.

haven't crocked in a long time but loved to make chicken & veggies ~ boneless chicken breasts are good, because then you don't have to pick out the bones.
You slow cook the chicken & add the veggies at the end. Garlic & onions can spice it up a knotch too.
Also used to make a desent ham & pea soup & it's pretty easy too..lentil is really easy as well, if you can't do the sugar in the ham or peas.

Thanks Dana. Both those sound good. when I run out of the corned beef I'll try the chicken and vegies.
The lentils sound good too.

I make this soup all the time in my crock pot (I had it tonight!). -chicken -proscuitto -box of frozen spinach -white beans -tomatoes -carrots -onion -garlic -chicken stock to cover -bay leaf & herbs de provance
I always vary the ingrediants based on what I have. I usually used left over chick or cut up a thin piece of boneless skinless and it cooks in the broth. The spinach also makes it really yummy.
