I am in charge of producing a new cookbook for our community. I think the title will be Treasured Recipes. Still fine tuning somewhat.

The proceeds will be used to help fund the restoration project of two Welsh stone cottages that our museum is trying to save.

Since I have most control over this, I am including healthy recipes and will also have a mini lesson on Lyme and other tick borne diseases. Our area is endemic and many are ill but only a few have found a diagonosis. Hope this is another way to get the message out.

Perhaps this recipe section will be titled Treasures for good health. Each section will follow along with a treasure theme that will fit in with our community festival in October. We even hope to have a treasure hunt for all of the children that attend.

Betty has helped and a couple of recipes have been sent along, but if you are willing to share any recipes that are good for Lymies, such as low fat, low sugar, good for detox, good for boosting your immune system, etc. I would be very appreciative.

I had added this to a nice post in off topic but fear that many do not have time to read off topic. I also feel that many may think this does not belong in General Support, but I promise you, it will be helpful for Lyme support for our community. I advocate daily and this may be a new and innovative way to hit some folks.

Dear Lymemomtoo,

I definitely feel your post belongs under General Support. Eating well is a very important part of our recovery.

Here is a low-carb recipe that is a great health booster:

Algerian Fish

1 garlic clove, crushed
1 teaspoon ground cumin
dash of paprika or chili powder
1 bunch cilantro, chopped fine
Juice of 1 lemon
salt and pepper to taste
3 tablespoons olive oil

2 white fish fillets (cod is highly recommended)

Mix all ingredients (except fish) together. Lay fish in lightly oiled baking dish, and pour marinade over top.

Bake fish in medium hot oven. You may cover with foil to speed the cooking process.

Thanks for what sounds like a very easy and yummy recipe, Mazou!

Having not cooked much fresh fish in my lifetime, I have four questions I need answered, before I decide to try it...

About what temperature should the oven be at?

Approximately how long should it be cooked for?

What's the best way to tell it's really done?

Exactly which fish have the least amount of mercury in them? (in order, if possible)

Mazou, this sounds great..Thanks so much.

Jennie- I used to have a list regarding the fish, but not sure where it is. sorry. I know that some of the larger fish from off shore were on it.

Also some fish have something, figutaria, or something. I know I have butchered that poor word.

You might be able to find it under listings for mom's to be. Think I have also seen where they say to limit fish that might contain mercury, etc.

I found tincup's detox tea recipe:

Tincup's Tea Recipe

1. Mix a batch of herb tea (not as strong as pills and extracts). Mix one recipe
one day, the other recipe the next time, and alternate between the two. Then
add the liquid extracts listed below.

Recipe 1

Use the following tea bags:

4 green tea bags (decaf)- antioxidant, detoxifiers, blood cleansers, energy
booster. Contains chlorophyll, minerals, and enzymes.

2 organic peppermint- stomach settling, enhances digestion,. Use for chills,
cholic, diarrhea, headaches, nausea, spasms, and poor appetite.

2 Dandelion- reduces swelling and fluid buildup. Cleans blood and liver and
used as a diuretic. Reduces serum cholesterol and uric acid. Improves
kidney, pancreas, spleen and stomach functions. Useful for abscesses, boils,
breast tumors, and hepatitis.

2 Red Clover - good for weakened immune systems. Acts as a natural
antibiotic, blood purifier, and relaxant. Good for skin diseases, liver
disorders, and kidney problems.

2 Pau d'arco- contains a natural antibacterial agent. It cleanses the blood
and is good for candidasis and all types of infection.


Recipe 2

2 Red raspberry leaf- Relaxes uterine and intestinal spasms. Promotes
healthy nails, bones, teeth, and skin. Decreases menstrual bleeding.

used as a diuretic. Reduces serum cholesterol and uric acid. Improves
kidney, pancreas, spleen and stomach functions. Useful for abscesses, boils,
breast tumors, and hepatitis.

antibiotic, blood purifier, and relaxant. Good for skin diseases, liver
disorders, and kidney problems.

Directions:
Boil a few cups of water. Remove from heat. Add tea bags from one of the
above recipes and let steep about 10 minutes. Remove tea bags and cool.
Add fresh water to make one gallon. Add 3-4 packs sweet and low, or sugar/
sweetener, honey, natural sweeteners, to taste.

Add:

5 drops (Herbs Etc.) whole seed Milk Thistle extract and

5 drops (Innovative Natural Products) Liquid Germanium

Drink as warm tea or on ice. You should drink the gallon of herbal tea
within 2 days and keep the unused portion refrigerated.

MILK THISTLE- Contains some of the most potent liver protecting
substances known. Acts as an anti-oxidant to protect the liver, stimulates the
production of new liver cells and prevents the formation of damaging
leukotrienes. Assists in protecting the kidneys, good for adrenal disorders
and inflammatory bowel disorders.

GERMANIUM- Improves cellular oxygenation. Documented study shows
improvement for rheumatoid arthritis, food allergies, elevated cholesterol,
candidiasis, and chronic viral infections.

This soup is a huge help for the belly, all the ingredients are IMPORTANT except chicken feet.

It needs to cook for at least 6 hours so it can get the good stuff out of the chicken bones, not just the meat.

This soup is very easy on the GI tract, very easy to digest, and helps calm inflammation. It also tastes awesome hope it helps!:

1 medium whole chicken--organic, free range or kosher chicken

3 quarts of filtered water

1/2 ounce structured water concentrate (garden of life makes one called Springs of Life-sold at Vitamin Shoppe)

4-6 tablespoons of moist high mineral salt

4-6 tablespoons of coconut oil

2-4 chicken feet (Optional)

8 organic carrots

6 stalks of organic celery

2-4 organic zucchini

3 medium-sized organic white or yellow onions

1 tablespoon Apple Cider Vinegar

4 inches of grated ginger

5 cloves of garlic

1 large bunch of parsley (added 30 minutes before the soup is finished)

Directions
Take the largest stainless steel pot you can find and fill it with 3 quarts of water.

Add 1 ounce of structured water concentrate and 1 tablespoon of Apple Cider Vinegar and let stand for 10 minutes.

Fill pot with chicken, vegetables, sea salt and other ingredients and bring to a boil. Let boil for 60 seconds and lower heat.

Simmer soup for 6-24 hours. Add parsley 30 minutes before soup is finished.

Remove chicken from the bones and add chicken meat back to the soup. Remove chicken feet and discard.

For anyone suffering acute situations with high inflammation, it may be best to allow the soup to cool and blend or puree all ingredients in a high-powered blender or food processor.

Your questions:

About what temperature should the oven be at? I put it at 350, but my oven runs a little hot

Approximately how long should it be cooked for? Until it flakes easily with a fork. It depends on the thickness of the fillet. I find about 20 minutes for a medium-thin fillet.

What's the best way to tell it's really done? I check it by cutting into a piece to see if it flakes with a fork.

Exactly which fish have the least amount of mercury in them? (in order, if possible): Actually, I don't know!!
