I'm trying to find some alternative snack options or things with substance for this lyme diet since I've been eating mostly green veggies.

How is the Larabar? I had one awhile ago before I was diagnosed and thought it tasted fine. do you think this lemon one is ok? Ingredients and description below..

Tart and tangy. Made with dates, cashews, almonds and real lemon, this bar simply bursts with flavor.

Lemon is also full of magnesium, potassium, calcium, phosphorus, copper, zinc, iron and manganese.

Its citric acid is nature's best source of Vitamin C - the nutrient that optimizes the body's balance of iron consumption, thereby supporting the health of red blood cells and boosting immunity.

Eat well... be well.

Ingredients:

dates
cashews
almonds
lemon juice concentrate
natural lemon flavor

I'm assuming the chocolate chip flavors are a no-no... boo.

I usually eat of these a day and have been for 6 months. Some worry about the sugar, but I haven't had issues (although am on Nystatin, GSE, Oil of Oregano, and Olive Leaf Extract.)

Yeah, just watch the sugar content. If you're having issues with yeast, then they are off limits.

Some contain more sugar than others... so read labels.

I think you'd be better off with an apple and some nuts. Or an ounce 85% Dark Chocolate (about 5 - 6 grams of sugar vs. the 22 grams in a Larabar -- although in a Larabar that sugar is all from fruit and that is concentrated so it's not as complex a sugar as in raw fruit; even in a high number dark chocolate, that is from refined sugar).

Calories: 220

Sugars: 22 grams

I took a look at most of their choices. Aside from some being gluten-free and some not -- the sugars, protein and fats were all about the same. How you can assess the sugar content:

Well, I wish it were lower in sugars (22 grams which I think is very high) but they are somewhat complex sugars (whole fruit would be more so) and with 11 grams of fat, that slows down the absorption rate. Just has 5 grams of protein (I'd like to see more).

What's New and Beneficial About Apples

* The phytonutrients in apples can help you regulate your blood sugar. Recent research has shown that apple polyphenols can help prevent spikes in blood sugar through a variety of mechanisms.

Flavonoids like quercetin found in apples can inhibit enzymes like alpha-amylase and alpha-glucosidase. Since these enzymes are involved in the breakdown of complex carbohydrates into simple sugars, your blood sugar has fewer simple sugars to deal with when these enzymes are inhibited. . . .

* 2-3 grams of fiber per 3.5 ounces, and that pectin accounts for less than 50% of this total fiber.

Benefits for Blood Sugar Regulation

* Slowing down of carbohydrate digestion. Quercetin and other flavonoids found in apples act to inhibit carbohydrate-digesting enzymes like alpha-amylase and alpha-glucosidase. . . .

* Reduction of glucose absorption. Polyphenols in apples clearly lower the rate of glucose absorption from our digestive tract. Once again, this change lessens the sugar load on our bloodstream. . . .

- much more detail at link above.

Organic apples are best, to avoid pesticides, etc.

The green Granny Smith apple is lower sugar. Ask your grocery - or scout the web for all the choices. Some are much lower in sugar than others. Usually cooking apples are lower.

I like the apple pie bars. They are good to keep in the purse and car for times when you need a snack but are unprepared. I don't eat them every day though they taste good enough that I'd like to!

I like the simple all natural ingredients, no fake tasting stuff, and no soy.

Do you have Target stores where you live? I noticed that they sell boxes of smaller one serving size prepackaged mixed nuts. This is a great snack too because they are individual packed and well sealed so you can throw them in a bag and not worry about the nuts spilling out or going stale. (peppermint/bubblegum flavored raw almonds taste really bad, lesson learned the hard way)
