I have been making Almond flour and Quinoa flake pancakes a few times a week for breakfast and wanted to see if others find this causes any issues?
I have been reading the Body Ecology Diet book and she only mentions soaked and sprouted almons, no almond butter (which I eat) and she states no flour. However, almond flour is really nothing more than blanched almonds. The quinoa is on the good list for anti-candida as well.
I am hoping this is OK. I also use a little Earth Balance spread on the pancakes with some cinnamon and stevia sprinkled on top.

- Almond butter is just fine. Raw almonds are just fine. Raw nuts are just fine. You can toast or roast then just before eating and they will be 10 x a delicious.
Trader Joe's and Bob's Red Mill (in stores and at their website) both have almond "flour" but may label it almond "meal" -
Well, I'm a bit (pleasantly) surprised to find the nutritional balance of Quinoa Flakes nearly identical as the whole quinoa, regarding the protein, fiber and carbohydrate breakdown.
Total Carbohydrate 30 g 10% Dietary Fiber 3 g 12% Sugars -- g Protein 6 g -

- I'm not so sure about that Earth Balance spread. Why not just some organic butter or ghee, or straight almond or walnut oil? Coconut oil?
Earth Balance spread has a lot of additives and it's hard to tell but it may contain MSG in the "natural flavors" - MSG is often in "natural flavors"
It's also just so processed with so many ingredients that are hard to know where they come from or how they've been treated. And "expeller pressed" is not clear enough.
All cold pressed oils are expeller pressed. But all expeller pressed oils are not necessarily cold pressed. It all has to do with temperature. -

Thanks, I didn't know Trader Joe's carried almond flour. I will look next time. Right now cheapest I found is $10.99 at Pathmark. Whole Foods has it for 13.99.
I need something moist to spread on the cakes, but maybe I will look for organic butter at Whole Foods this week. Does Trader Joes carry organic butter? I have never seen ghee in a store. We have an Indian grocer a little farther away I could try. I know in the Ecology Diet book, she mentions no dairy, the Lyme Diet book mentions no dairy, and people on the forum mention no dairy.....both due to the dairy sugars and the fact that it is a pro inflamatory agent. In avoiding dairy, I never notice differences in pain levels.
Maybe I should cut out my Almond milk as well or my Trader Joe's Whole Grain drink. I have the Hurom Juicer coming so maybe I can make my own juice.

I'm looking in a Bob's Red Mill catalog and see they have -
Almond meal/flour, 16oz. for $12.17 Organic Coconut Flour, 16oz for $6.92 Hazelnut Flour, 14oz for $11.50 Organic Quinoa Flour, 22oz for $11.22
I think Coconut oil sounds fabulous to spread on the cakes!

So then Spectrum Spread is OK? As long as it is cold pressed? I have not found any local stores that carry Spectrum Spread.
I might just search out some substitute. I am not a big fan of coconut oil though.

I would not use any oil spreads as most are just too processed, whipped at high speeds with some sort of additives to harden and preservatives, too.
I would stick with organic butter or ghee - or straight nut oils, or coconut oil or coconut cream (thicker, better for treats). Hazelnut oil is my favorite of all the nut oils as a topping. Avocado oil is great to saute.
The least processed is best. The freshest is best. You never want to use old oils. -

Trader Joes has an Almond Nut Meal. My sister brought me some when she was up for Thanksgiving. TJ's has a list of their gluten free products online.

I know Almond flour and some quinoa flakes should be fine for pancakes but when i eat them it feels so woong, LOL. Like I am cheating on my anti-candida diet. LOL.
I tried coconut oil on the pancakes this morning and it worked fine! This way I can avoid dairy and oil spreads.
