Well my friend from India kept telling me to use fresh coconut instead of the canned coconut milk and it took me way too long to try this, it is GREAT.

He also told me to buy them at an Indian grocery because they are so much cheaper than other stores.

I used some of it fresh in smoothies just threw it in the blender first and chopped it well before adding in anything else, but had so much left I decided to peel it and grate it up, I dried it in the oven on a cookie sheet on low heat about 175 degrees flipped it a few times and when it started to get a little brown it was done, I did not have to pack any away because I ate it all!! drying it really brings out the flavor.

It is great by itself or even better when added to some nuts for a trail mix.

The hardest part is getting the coconut open !!!!!

Yep I love it too. We drink the young coconuts and eat the meat... they are easier to get out then the other coconuts. Do delicious!! I usually buy them from Asian store 2 or 3 boxes at a time. Perfect for the hot summer months!

That would hold me back for sure!! We used to eat fresh coconuts when I was a kid. They're great!
