- Metaphorically, of course. Seems to be - for some people, that is. And if so for some who deal with BiPolar / Mania, then,
for others who are sensitive might also experience what I call, the rocket-fuel effect with anxiety, energy that is zooming all over the place. - whether with body, emotions or even maybe just with attention span?
NITRATES might derail, even crash; PROBIOTICS might help keep train on track, so to speak.. Although avoiding nitrates seems the best answer here . . . the gut microbiome is always deserving of proper attention.
The Frightening Link Between Beef Jerky and Bipolar Mania
In humans and rats, eating cured meats might induce manic episodes.

The nitrate-free-meat rats? Normal. The beef-jerky rats? Extremely hyper.
Yolken and his team then looked inside the brains and guts of the rats. Their brains exhibited gene and molecular-pathway changes that are similar to the kind seen in people with bipolar disorder. What’s more, the manic rats, the ones with nitrate in their diet, had different kinds of bacteria living in their guts than the control rats did.
The researchers don’t know exactly why the nitrates had this effect. Nitrates have antibacterial properties, and Yolken thinks the preservative might have been altering the microbiomes of the rats and the humans.
In past research, he and his colleagues found that when people who were hospitalized for a manic episode were given probiotics, they were less likely to be rehospitalized in the next six months. . . .

See post: Caution: Aspartate; Glutamine; and Phenylalanine (3 excitatory amino acids that can be wrong for us when added as supplements, beyond a normal dietary level)
Seaweed has its own natural MSG and can be very excitatory to some who are sensitive. -
