Most gluten free breads just do not make a good grilled cheese sandwich IMHO.

I asked at a tiny restaurant in the wilderness where they get their bread. I was surprised they even had anything gluten free.

It was Tapioca Loaf and I hope I find it in the city here.

It was thin-sliced and held together unlike most gluten free breads. They had toasted it on one side.

Now if I could just find a gluten free tomato soup to go with the sandwich.

I really shouldn't be eating cheese though.

Super grilled cheese: Rudi's GF bread and sliced rice cheddar cheese. This is a real treat!!!

I miss it as I'm no longer eating grains.

PS Spelt is in the botanical wheat family and has gluten.

i make an almond and flax meal bread...tastes a bit nutty but makes decent toasts...happy to provide a recipe if needed

Actually, if you are going low carb and higher protein it's a great website. She doesn't post a lot, but believe me, she's a friend of mine and an amazing cook. If you sign up as a follower you get an email whenever she posts a new recipe.

The recipe is for flax seed crackers, but my sister and I have both used it for crackers, in place of a bagel for cream cheese and lox, and as a pizza crust.

Really yummy and quick to make. I do a double batch on Saturday afternoon and make a pizza with half. I leave the other half in the fridge and roll it out on Sunday morning between two pieces of parchment or wax paper. Take off the top piece of paper. Lay it out with the bottom piece of paper on a cookie sheet and just carve in lines to demarcate rectangles about 4 x 3 inches. When they are baked, they can be separated. Smear with cream cheese or eat like a cracker, or make a sandwich. Really good.

I've seen this even in major chain food stores. It's pretty good toasted (certainly better than any alternatives I've tried).

Kinnikkinnick also meats tons of gluten free breads - their sesame bagels are suprisingly good. But I've only found these in health food stores.

Oops! Thought I posted this in General Support. Should it be moved?

The flax crackers sound yummy, but I thought that whole flax seeds can't be broken down in our system. I used to put in coffee grinder to sprinkle on cereal.

My favorite is Udi's cinnamon raisin. Even my nieces who know nothing about the issue of gluten love it.

The tomato soup we make is gluten free....

I use home canned tomato juice (V8 juice) add a little salt, pepper & butter, and then a pinch of baking soda when it boils, before adding cold milk. Slowly heat til desired temp, but do NOT boil.

Marz, the recipe uses ground flax seeds. I made mine with half golden and half regular.

I make my daughter sandwiches on tapioca loaf. It has tobe toasted but it is better than most. The company name is ener g. We have it here at whole foods. I think you can also order it online she has just begun to tolerate dairy so grilled cheese OSA super favorite of hers.

tapioca loaf is my favorite. It's cheaper on vitacost then in the store, they also have almost everything GF you could ever want.

Also, I think it's Pacific City brand? that has good gluten free tomato soup. It's in a box and can even be found in some major chains in the health food department.

I recommend Ezekial bread. While not "officially" gluten free, it is made from sprouted grains and not flour and is therefore very low glycemic.

Most LLMD's say Ezekiel bread is OK to head if you are on an anti-yeast diet.

I can't tell the difference between Ezekiel and regular bread. The grilled cheese's with it are great, as is french toast, sandwhiches, etc.

When I tried Ezekiel bread recently, the inside of my mouth was irritated. Not sure if that's a gluten thing. Seems it should be ok since it's made from sprouts.

I've still got some in the freezer and will try it again. Yes, it would make a good grilled cheese sandwich.

I know this thread is old now but thought a warning was in order... do not eat Ezekial bread if gluten-sensitive.

I went to a cafe today that had a hummus and veggie sandwich on the bread and I had never had the bread before. Within hours I became severely bloated, am in pain with gas, have literally gained three pounds in as many hours, and it hurts more to sit up. I have not been this sick with GI issues in about a year. I logged on tonight just to see what is actually in the bread and, lo and behold, the one I had has gluten. I'll be calling the cafe to make sure they know, and thought people here should be clear on that point.
