Dr. Wallace talk about Cereal Killers, problems of nutrition absorption.

Some of the topics he talks about:

Lack of low pH in the stomach is very important for absorption of many foods.

All enzymes are pH dependent (different nutrients need different enzymes to be broken and digested)

Little salt (NaCl) intake = little HCl (stomach acid) = bad digestion of proteins.

Stomach is very acid, but little intestine after it, is very basic!

Bile: help you to absorb fats.

Cholesterol is very important for your cell walls, brain, enzymes.

10'00: good bacteria are all in the colon. The acids of the stomach kill the most. Only a few will survive if the conditions of the colon are good.

Probiotics in the colon produce VitC, Vit B12 etc.

4 stomach animals (ruminants) digest herbs: antilopes, deer, giraffe, moose, sheep, goats, cattle, goat, sheep, etc. They are able to digest grass due to 4th stomachs.

They ferment the grass (make beer) in the 3rd stomach that are full of yeast, viruses, protozoa, bacteria. All those produce enzymes that helps to break the grass to simple sugars. Bacteria add acids to them and produce aminoacids.

Protozoa take aa and use them to produce minerals. The cow is eating grass to feed the little animals in their stomach. The cow is not vegetarian, indeed!

The bacteria PRODUCE the chelated minerals, which the cow can absorb (not inorganic minerals, which are practically useless for it).

T cells are activated by thymus.

B cells activated by the appendix (linked to the immune system).

You need salt NaCl: or you get more allergies.
Low salt, low stomach acid.
Low stomach acid, no way to take in iron.

20': Cerial Killers: grain killer.
Breakfast cereals, wheat barley oats.
Hybridization: just to increase yield.

Unintended consequences: wheat got less proteins (13-17% of protein in the past). Today only 3%.

soybeans: have more proteins, that is why life stock needs soybeans.

Cellulose is hard to break down: wheat today has more cellulose. We need bacteria to break down that. They produce the right enzyme.

It causes soft stools. Fiber = cellulose.

Undigested proteins go to the blood: cause allergy. You are not supposed to have big proteins in the blood, only aminoacids.

Skin contact intolerant (nickel, metals).
Poison ivy causes contact intolerance (it's not allergy).

Intolerance of food: same as poison ivy: the contact makes your skin react.

Wheat allergy different to intolerant to wheat proteins (gluten).

28': we don't need enzymes in the food. We need nutrition, raw materials.

Low stomach acid: bad digestion of wheat, barley, proteins, eggs, fish, plant proteins. Then the undigested food becomes a dangerous chemical soup.

It's like poison ivy touching the inner part of the gut. Villae swells. Squeeze the blood vessels. Low nutrition absorption.

Celiac disease: villae die due to lack of blood circulation. You lose absorption dramatically. Your gut is just scar tissue from dead villae.

Autopsy: you can see that very easily. All the scar tissue formed. It's a mess in the gut!

Chron, celiac, leaky gut, all the same, caused by gluten intolerance.

Essential Fatty Acids deficiency: colic in baby. Baby has a gluten intolerance coming through breast milk from undigested gluten from mother.

Children: get gluten sensitive.

33': Same children can get gut patches with Chron, patches with celiac, patches with inflammatory bowel disease. But you just see baby with colic, that is all.

Children 5 years old: asthma, rashes. Problems with omega 3, essential fatty acids which are big molecules.

35: the importance of chlolesteral (hormones, brain, myelin). Lower than 220 chlolesterol in the blood is bad! You may die with low cholesterol.

Inuits have 350-500 cholesterol in their blood: they suffer from less cardiovascular diseases! Raw red meat is great. Frying them not!

Low cholesterol signs: you forget things easily, dry skin, cracks in the heels, eczema, splits in the skin, ...

Remove the irritants: gut heals on its own.

38': the Greek knew about celiac disease 200 years ago! Ex. macrobiotic diet.

Greaks realized if you ate more rice, beans, lentils, corn, millet etc. All the problems went away.

Germany created brown rice diet: macrobiotic diet.

China: they eat rice and millet, buckwheat, squash etc.

US: meat and potato eaters: they do not have celiac.

40': cook with water, in the oven. Do not fry your food.

You may use butter, but do not heat it high temperature.

The more cereal you eat, the more salt you need.

Acid reflux: caused by LOW STOMACH acid, not high.

Burping, belching... There are bacteria in the stomach which are supposed to be sterile.

Carbonated drinks: it's bad to digest gluten proteins. B12 cannot be absorbed.

Calcium deficient. Hair analysis to see if you got minerals.

Thanks brussels.... i think my stomach acid was lowered by my body to try to build flora up after i eradicated it ...i feel bad for people who use zantac and the like to lower acid ..i just started hcl and enzymes to help and it triggers gall bladder to release bile . So are probiotic enemas any good ?

I don't know what are probiotic enemas. Does it mean putting probiotics directly into the gut (the way people do coffee enemas?).

I know about fecal transplant. I mean, I've heard it is good, but you got to choose stools from someone you trust, I suppose, and healthier than you.

If I were brave and knew some dr with experience, I think I would try it. I know animals do all sorts of things to keep their bowel flora well...

We avoid all good things for the flora (washing veggies too much, eating pesticides and herbicides that kill bacteria,..)

I just found this dr. Wallach and his follower interesting when they said acid reflux is a wrong name: in fact it should be called basic reflux or so, because that is the problem!! Low stomach acid.

It made me think. And that low salt consumption may be one of the main culprits! So all the opposite of what we are told.

then the talk on the low cholesterol diet being harmful for a lot of things (specially low hormones, low enzymes, as these are mostly formed by cholesterol molecules), also made me think.

And the story of the cooking oils (all veggy oils being bad, because they oxidize in forms of oils), while lard and butter being healthy.

I don't know if they are right, but it makes some sense. And their firm statements on the relation of eczema and wheat or gluten ingestion, it also makes sense.

I didn't know that the gluten problem was SO OLD, dating the old Greeks!! At that time, some people already knew about the problem.

Today, I think it is almost sure to say that I know no one that have good GI tract.

Just see the amount of inflammation, or cardio vascular problems, or skin diseases, or immune problems, joint or bone problems these people have....

All linked, basically, to the gut health.

It makes me feel better though to know that the problem is ALSO old, thousand of years old.

It was for me a big surprise when I was reading about a therapy of exactly 100 years ago, to help patients ABSORB minerals!!¨At that time, a dr was looking for ways to increase mineral absorption.

Before chemicals, before total mechanization of farming. Now the picture starts to get clearer to me: possibly, grain consumption was at the start of the problem??

The dr mentioned macrobiotic diet. I know some people who followed that decades ago.

A lady with full blown cancer, no more hopes. She even went to the US to get treatment. Drs. sent her home saying 'no hope'. They did all surgeries they could.

She started macrobiotic back then. She is still alive TODAY!!! She must be around 80 now.

The cancer stopped progressing completely, meaning, the macrobiotic diet made her immune system kick in. Of course she ate as in the book, chewing hundreds of times, etc.

It's a pretty hard diet, but as she had no choice.... Basically she avoided meats and any grains except for brown rice.

Brussels, I don't understand, what is the poison ivy connection? I have had a heck of a time getting rid of some poison oak (similar).

Catgirl, I just tried to write down what the dr was saying. Sorry for messy writing...

He said most people (about 80% after 50 years of age, if my memory is good) have intolerance to gluten.

He sees that in autopsies he does: their gut is full of scars of wounds that healed improperly. Hard tissue to the touch.

He said you can feel it all over inside the gut.

He said that intolerance is not allergy. Allergy is a different phenomenon.

Gluten intolerance is LIKE poison ivy reaction: most people are not allergic to poison ivy, but the skin reacts to it.

Same with gluten: the skin (gut wall) react to the CONTACT of gluten, in a similar way it would react to poison ivy. What he calls gluten intolerance.

It creates inflammation, then open wounds, then the GI tract is not working properly anymore and leaves big molecules go into the bloodstream.

That is when you get allergic to, e.g., tomato, oranges, whatever, because your body cannot deal with big molecules (undigested) in the blood stream.

Next time you eat orange, alarm rings, and you get allergic. The body attacks it as an invader.

But most people are NOT allergic to gluten, according to him.

Okay, now I get it. Thanks Brussels! It is amazing what gluten does!

I went nuts a few months ago. The gluten made several forms of lyme come back after a few days. I was so tired, and a little bit achy.

Fatigue went away after a few weeks though, but it did set me back. All sorts of weird stuff popping up on biofeedback (food allergies, lyme, etc). I'm rebuilding my gut. Gluten is wicked stuff. I avoid it, but on occasion I go nuts.

Sorry to hear that Catgirl...

It's amazing what people here do not know: diet plays such an important role in inflammation and health, and they just think that abx will do the job alone.

I am doing my best to avoid a relapse and to eliminate candida and food allergies for good.
