I think you are describing Aphthous stomatitis.

https://en.m.wikipedia.org/wiki/Aphthous_stomatitis

The cause of aphthous stomatitis remains unknown despite considerable research. Various antigenic triggers have been implicated as a trigger, including L forms of streptococci, herpes simplex virus, varicella-zoster
virus, adenovirus, and cytomegalovirus. I] Some people with aphthous stomatitis may show herpes virus within the epithelium of the
mucosa, but without any productive infection. In some persons, attacks of ulceration occur at the same time as asymptomatic viral
shedding and elevated viral titres.16]

I think if you do a search here on LymeNet, you might find lots of Lyme patients have suffered from mouth ulcers. I think in Lyme patients it’s caused by our immunological abnormalities, hormones, stress, anxiety, lack of sleep, low iron, low Vit B 12 and low folic acid. Also mast cell activation and food allergies.

I was diagnosed by my dentist. I had it on the inside of my cheek, which made chewing extremely difficult. I kept aggravating it and compressing the sore into a hard lump. One year later, I had to have it surgically cut out. An in and out appointment of 30 minutes, no reoccurrence.

Hope you feel better and get an accurate diagnosis.
