Am GF. Stopped using store bought bread as most are rice flour based and I figure I don't need to add more arsenic to a body with genetic detox challenges. Has anyone had success with an easy to make edible sandwich bread without rice flour? (Or a decent affordable storebought one?) I am really missing sandwiches....

Try looking into Chebe bread mixes...tapioca-based, no rice.

- Corn is also important to try to avoid. and it's so common in so many processed foods, too.
There are more and more gluten-free and corn-free options yet you may be able to just find a better solution from the plant world.
What about using something like BOK CHOY for a sandwich WRAP. Not the baby bok choy but the larger variety. It's nice and sturdy but has some give to it. -

Thanks Keebler - I'll check it out. I like the GF Paleo Coconut wraps from Julian bakery and the almond bread is ok but both are so pricey...

I have to make my own with almond or coconut flour. I tend to freeze a bunch for the weeks I'm not too into cooking
