Due to my progressing age I am trying to eat healtheir. One of the things I do eat is potatoes in most every form.

Are baked potatoes bad for you? I do use real butter and salt on them.

Next what is the difference between baked potatoes, traditional, and baked french fries?

Every one says fries are bad,,,but if they are baked from frozen for say 20 minutes and then broiled for 5 they are about right to eat

Also eat alot of white minute rice,,,some with Diny Moore stew over it and some sprinkled with sugar.

About the only sugar I eat any more. So thats about 2 or 3 times a month.

What else is quick and easy for a 1 person house? I do make chicken and noodles and beef and noodles some too.

Cant do coconut or any nuts stuff,,,nor any garlic what so ever which is why I eat EVERY meal at home,,,havent drove thru in over a year,,anywhere

If the potatoes are organic and not fried (in any way), IMO, they have good health benefits as part of a balanced meal.

But also remember all the other root veggies out there: parsnips, beets, etc.

Root vegetables help keep our inner strength and the above ground veggies help to balance that out, so the Chinese say (better than I just did).

And, real butter, again - organic - is good. Ghee is also okay (but more expensive)

SEA Salt, not regular table salt, though (additives).

Baked fries, the oil can get too hot. When any oil get too hot for too long it can become bad for us. Go very light on the oil for any kind of baked fries and then add a little fresh as you serve.

Never bake in Teflon or non-stick, though, as that petroleum coating on the pan will off-gas. If that's all you have, be sure to open windows for good outside air flow.

Avocado oil has higher flashpoint than olive oil so that it won't get so bad at higher heat as fast.

Extra Virgin Olive Oil is a good choice to add as you are serving the food. Avocado oil also nice to add at the table.

as for the white rice and canned stew, ohhhh. Both those can be really rough on any body.

There are better ways. Stew beef from the meat counter at your grocer is easy to prepare. YOu could use minced onions, and spices and all your own fresh carrots, etc.

WILD RICE very hardy in a stew.

TINKYADA Gluten free Pasta very easy to make in a small amount.

They are good unless you eat them every day.... If you eat them a lot and you eat other foods that are high in oxalates, they can cause trouble.

(ONE trouble would be kidney stones)

But other than that ... HAPPY BIRTHDAY, DON!!

Sweet potatoes or yams are a nice change from regular potatoes. Baked sweet potatoes (I like the orange ones!) with butter and salt - YUM!

Sweet potatoes are also high in oxalates .. just saying.

May or may not be an issue for you.

Thanks all

Keebler, Oh Diny Moore is for special occasions,,,so far today had a 4 day old baked potatoe

and a cup of campbells soup and a Cotto Salami sandwich(Of which I eat too many of)

I am really going to splurge in about an hour,,,,a big bowl of popcorn

I do have to get up at 4 AM to go to work,,,dang.

How old should you be to retire???MY body says sooner,,Especially on those long hard days, usually Thursdays

My thinking is I can work now but 20 years from now not so much.

have a couple guys I work with that are in their late 70's and still HAVE to work cause they dont have two spare nickels to rub together.

Hi JD! I've had to change my diet recently so here's what I'm doing for convenience.

I bake chicken breasts and cod in batches. Both get olive oil, pink salt and herbs. Then I stick them individually in sandwich bags and the whole lot goes into a ziplock freezer bag.

I buy organic salad mix and top with one of the meats-chopped with kidney beans, grated carrots, cucumber, avocado, more pink salt, raw apple cider vinegar and walnut oil.

I try to eat this once a day. It's a huge salad so my other meal can be lighter, like a can of soup or something similar.

The key to any diet is 4 little words. Or is it three? Or 8 syllables?

Everything in moderation!

Your potatoes are fine. French fries in moderation is fine. And like my cookie insert says... "If you are going to eat a cookie, eat a cookie."

In other words, if you are going to alter it to be something less and be something someone thinks it should be, don't bother.

And, good to know, I just read some studies where butter is very good, believe it or not, as is 1/2 and 1/2 (cream). In the literature it is referred to as butyrate, and it is an anti-inflammatory, amongst other things.

As an idea.... I've been making "mason jar salads", doing it once a week to last 5 or 6 days, every two weeks or so.

I don't use the fancy recipes provided, just basically the idea. Works nicely, only one mess from salad making once instead of every day, fresh ingredients, variety and good for you.

Also want to mention the salad idea can be pasta salad, rice and something nice, cottage cheese and peas or fruits, cole slaw and boiled eggs, leftovers, and whatever. Just line up those jars and...

Back to my story...

Mason Jars- line them up and fill 'er up and keep on trucking.

It is REALLY nice when you are in a hurry and/or not feeling well, to be able to reach in the fridge and just grab something already totally made and ready to eat that is fresh, healthy and easy to clean up after.

Warning though, when I make mine it seems the floor gets pretty trashed from dropping stuff all over. That is kind of good (sort of) cause then I am forced to mop the floor after I make the weekly batch instead of just sweep or swiffer it.

I buy lots of stuff on sale like family packs of pork chops,chicken legs,ect .I freeze them in one meal packages. Defrost in microwave and fry them up,add baked potato and oh so good.

Same with the fish I catch. Is best to wrap in saran wrap then put in ziplock bags get all the air out.

I can tomato's in mason jars,and pickles.

Well i juice the tomatoes now, can't eat the seeds.

Pickles have to be seedless. Or I can scrape out the seeds.

Pickles? Amazing.

My grandma made the best homemade pickles. My mom tried, most of her life, to duplicate that talent.

Bless her heart, but her pickles were awful. We all tried to eat them and be polite, but every year we'd want to run and hide when she'd bring them to the table.

This old episode (a short clip) of Andy Griffith was very funny. Are your pickles like this Maddog?
