From today's New York Times. For those that do not know NYC, these establishments are top notch, not fast food places, etc. The Mercury in Tuna originates from factories and power plants (coal burning).

As a general rule, the bigger the fish, the more Mercury that accumulates in the fish. This holds true whether from lakes or from the ocean.

That's a frightening thought. [Eek!]

I'm glad that I am too afraid of parasites in raw fish. I tend to lean toward the eel & squid or things that are generally cooked. My fear of the raw fish has prevented me from eating the Tuna.

I hope you have not been eating it! [tsk]

Cooking the fish does not remove or neutralize Mercury.

Chilean Sea Bass has almost been fished to extinction. many NYC restaurants have removed CSB from the menu.

Hmmmmm, somthing fishy is going on here...can't eat much of anything without something being wrong. STUPID HUMANS!!!!!

No cooking does not remove mercury, but if you are avoiding the raw fish you are avoiding the sushi fish which would contain mercury, merely by coincidence.

I've read that parasites are not a problem with sushi in the US because ALL sushi fish has to be previously frozen for that very reason. http://www.mass.gov/Eeohhs2/docs/dph/environmental/foodsafety/sushi_guide.pdf

I love sushi, but try to restrict how often I eat it. I guess I'll also have to be sure to take a good dose of chlorella when I do.
