I'm a total idiot when it comes to nutrition and WHAT I should be eating with my lyme and antibiotic therapy. How do I go about figuring it out?
How do I go about finding a GOOD nutritionist to help me? Any advice or suggestions?

A good place to start might be looking for someone who is a "functional nutritionist". Some have had trouble finding one near them, but I personally did not- one right in my city.
They are not your average dietitian-type of nutritionist in that they can help you get on supplements and dietary regimes that aid in reducing inflammation and work on other areas that Lyme and company aggravate.
