I've made cauliflower crust stuff before.
I recommend doing the microwave method if you can. You need the cauliflower really dry or you get a very watery, soggy crust. It's gross and unappetizing.
After all that work, you don't want a disgusting crust.

When making the pizza crust you have to squeeze the cooked cauliflower in cheesecloth or paper towel to get the excess moisture out. We add mozzarella to that to help hold it together.
Makes a pretty good pizza but you need to use a fork to eat it. Tasty!!

I tried this before, but I had some issues with the consistency. It didn't hold together well.
Also, I got my recipe/instructions on Pinterest, and I ended up almost setting the oven on fire because I believed wax paper could go under it.
Sigh. Cooking with Lyme brain is just unpleasant. haha
