Look up the Specific Carbohydrate Diet. I followed it for over 1 1/2 years and still do a modified version of it. It helped me stay alive.

Dr. B's "diagnostic hints/guidelines" document available on ILADS also has some recommendations.
You can see there is a thread titled something like "Is a low-fat diet the answer? Dr. F. thinks so". This addresses a diet Dr. F. recommends for those with a protozoa type bug he recently discovered.
I have found I have needed "high protein" early on, with somewhat diminishing protein needs as I've improved. I put it in quotes, because, as a vegan, my "high" might be someone else's "medium". Meat does make things very acidic, which can be negative as well. I am staying vegan and adding supplements for the time being. In the past, I also added high protein "meat substitutes" like wheat gluten and/or tofu. But now I am going very low fat, so those don't work, so I am eating high carb with protein pills ("MAP Protein"). This diet would be challenging for those with a very bad fungus/candida issue.
Certainly there are varying opinions. And I think part of that is, people are different with different needs, but even so, our situation changes over time, what the priority is to deal with.

- Many with lyme do best going GLUTEN-FREE. Many LLMDs strongly suggest that as it can matter so much. IMO, it's very important to consider this.
DAIRY-FREE also helps many. But you might do fine with GOAT CHEESE. Many who can't "do" diary can "do" goat cheese. Feta is just one type but be careful and read the label to be certain it's really from goat milk and has no bovine milk.
A MEDITERRANEAN DIET (minus the wheat and the wine) is a very good basic plan.
Be sure to eat at least 2 servings of veggies with every meal, especially breakfast. And for snacks. Veggies in all the colors you can find.
Olives. Nuts.
Some with candida really need to limit fruits to those with the lowest sugar and most antioxidants. Berries are best, lower glycemic index. AFTER a meal best so that the sugar is not by itself.
Of course, avoid all processed foods, additives, dyes, etc.

I agree with faithful777. I had my appointment with Dr. Peter D`Adamo in Wilton, Ct. two years ago and his Genotype program is the best nutritional program I have ever been on, and i`ve tried everything. It is all individualized. If you cannot get to Ct. to see him, you can order his software program, which is what he uses on all of his patients.
