Topic: yuca can soak up sulfur vs starch?

For those of us with MTHFR or CBS genetic mutations: I've read that yuca can soak up sulfur, but when reading recipes I find it's very high in starch, which turns to sugar as soon as it hits our system. Does anyone have a recommendation about this benefit versus the starch content? Thank you, Susan
