Looking at your posting history, it appears that lyme is clearly in the picture. Be sure to be assessed for OTHER tick borne infections that often travel with lyme.
This video / book can be overwhelming at first as it's packed with so many good points. Just work through at your own pace and take study breaks.
Yes, I think going gluten-free is a good move, as is going scent free, etc. Search: Environmental Working Group for product sources.
I would not bother with food allergy tests, or any allergy tests. Although a genetic test for celiac can be helpful it's still good to drop gluten (as least during treatment) but if you might just happen to be celiac, that's key detail.

Had to laugh about my experience with your question.
If you go to infectious disease doctors they will rule out everything for you with the useless tests they order so they can suck up your hard earned money. Unfortunately I had my share of them- what a shameful bunch they are.
Anyhow...
Since we now know about it, and didn't before....
Might want to have the tests for MTHFR if you are getting blood tested. Not vital, but good to know.
As for other tests, besides coinfections- found at link below...
I'd wait for now. If you eventually hit a stumbling block then possibly consider digging deeper.
Right now Lyme, et al is so hard to incorporate into you life (the fight it takes), perhaps to best focus on that. That's my unprofessional opinion.
As a comparison, I made a pot of ham and bean soup yesterday. When it was almost done I realized I forgot the ham! TWO ingredients and I forgot ONE? Oh my!
