I think that a decent diet plan to follow is phase one of the South Beach Diet.
Basically lots of protein, lots of veggies (green, no starches), nuts, beans and health oils and fats.
Although SBD does allow for large portions of red meats, I would monitor this for the obvious saturated fats.
I eat a veggie omlet for b-fast (or sometimes old-fashioned irish oatmeal which I do ok with)
Lunch is a caesar salad, no croutons, sometimes with grilled chicken or a few steak tips. Caesar dressing is low-carb with no sugars added (the full-fat variety - low-fat and no-fat have sugars added)
Dinner is usually stir-fry veggies with chicken, beef, tofu, etc. or a few different servings of veggies and a portion of protein.
For snacks I eat roasted almonds, cheese sticks, raw veggies with a little goat cheese, sunflower seeds, etc.
I stay away from caffine, sugars, most simple carbs and alcohol. I also watch how much red meat and fish (heavy metals) I eat. I try to purchase meats and veggies that are organically raised, vegetarian fed (meats and eggs), free-range, etc.

I believe diet is a huge part of the secret to conquering Lyme. A healthy body can fight off many infections.
