Back in my pre-Lyme days when I had many bouts of candida, even systemic, I think I read every book, every handout from my holistic practitioners, etc.
When I first got Lyme and didn't know what it was, I bought the latest books on candida, and of course, now there is the Internet with websites.
I empathize with your frustration - I have yet to find diets that are 100% consistent with one another. Some are far more lenient than others.
Dr. William Crook is probably the best known author and pioneer in candida diets. I have all his books from many years ago.
I have done extremely strict candida diets in the past for several months, but they are very hard. Of course, when you have to, you have to.
I'm trying to get back on a stricter candida diet now. But part of me hates to give up fruit, etc., for the nutrients and variety. But I may have to for the initial induction phase.
I'm already gluten-free so I had already cut out most grains.
But like Lyme treatment, candida treatment seems to have different recommendations.
I wish they could all agree!!

I knwo where you're coming from and when candida was a huge issue for me i was really irritated with never getting a straight answer about the diet.
I think the important thing to remember is that everyone is different and will have different sensitivities, allergies, and nutritional needs. You must figure out for yourself what those are.
The best way to do this is by keeping a food diary and putting yourself on a four day rotational diet--that way you will be able to gage if you are reacting to anything.
I also agree with Lymetoo that the less carbs, the better. I made my greatest progress when I ate only 1/4C dry of low glycemic grain a day. i did this for about a year and it worked wonders!!
