Great news for you that your lyme symptoms are gone.
Killing yeast is just as hard and maybe harder. I have been working on my yeast for 1 yr under the care and guidance of a doctor. I have cheated very rarely and still, bloodwork shows I have some yeast remaining. I was very infected one year ago.
I have eaten fruit throughout the year as I feel the benefits of fruit outweigh the bad and I have to have something good to eat. My doctor approves. I do try to stick to the low sugar fruits.
If you have a holistic dr, then you probably already know the best ways to fight the yeast. I would give it a solid year before relaxing on your diet.

It is important to stay on the no sugar, low carb, low yeast diet while you are on antibiotics for Lyme. You should be taking probiotics such as theralac etc,. during your treatment. I would do the low car, low sugar diet for life if possible. You will find lots of info here.

"Successful control and elminiation of a Candida Albicans overgrowth requires a multifaceted program as described below. Failure to follow ALL the steps simultaneously will result in slow progress and will lengthen healing time significantly. What do you mean "My lyme level is low" ? Also, do you have any co infections?

My D.O. said by the symptoms I now have compared to what I did have, Lyme load may be very low, hense the herbs. Abx, maybe in the future, now kill off yeast.

I'm also at the tail end of treating Lyme symptoms - I'm symptom-free while on the Buhner herbs, UNLESS I eat things that exacerbate yeast. Other than avoiding carbs (and of course alcohol) I can do whatever I want- skip doses of my herbs, 'overdo' my work and not sleep enough, etc. It seems like a tremendously big part of my health revolves around controlling the yeast.
Do you cook? There are some really good low-carb/yeast diet recipes at wholeapproachforums.com . If you don't cook may I recommend it as a new hobby now that you're healthy and presumably have energy? It makes it a lot easier to deal with 'the diet'.
My health really picked up about 6 weeks ago when I started eating an anti-yeast diet - before that I was off sugar for about a year and still got yeast infections. Being off most sugar that long (I still ate fruit, which I"m now trying to avoid for the most part) made it easier to go on the stricter candida diet, which eliminates more of the carbs I used to eat (bread, pasta , grains, etc). I don't really have cravings for sugary stuff or carbs in general now, probably because it was a slow transition away from these foods. I'm sure it's more difficult if you've just gotten on the diet for the first time.
The interesting thing for me was that I"m on Biaxin for a non-Lyme problem (ulcer bacteria) and I actually don't have a yeast infection- which is unheard of for me with antibiotics. I think the diet is really a huge part of eliminating the buggers.
Before going on the diet, I was on diflucan for a month with virtually no effect, and most herbal antiyeast remedies also had no effect.
