Let's talk food.

I'm so bored with my 3 meals. please help me stretch my imagination : )

I eat...
Chicken breasts with veggies
Ground Turkey with corn tortillas
Chicken + Bean Soup

I need more ideas/more meals. Please help.

Have you tried a chicken and veggie stir-fry using olive oil and gluten-free soy sauce? [lick]

How about making chicken enchiladas with the corn tortillas? [lick]

How about home made chicken chili? [lick]

Can you have eggs?? [confused]

My diet is super limited right now and I can't eat the foods you've listed...BUT...I used to be able to eat them! Here are some things I did to mix it up a bit:

-Chicken and veggies taste great tossed with some mild salsa. I used to cook the chicken and veggies (veggies should be a little firm), then get out another pot and heat them back up in the salsa. Mmmm..
-Another thing you can do, is instead of bean soup get some organic refried pinto beans (Bearitos brand even makes a fat free one with just water and beans) and make a taco salad. Put your chicken, salsa, lettuce, veggies, cut up onion and bell peppers (roasted onion and bell peppers under the broiler are DELICIOUS) ontop of the refried beans.
-For lunch, instead of corn tortillas, you can get blue corn chips. They're lower in fat and carbs than regular corn chips. You could kind of make nachos out of it with the ground turkey (you can put fajita spice in the turkey)
-They make gluten free gravy packets now (Road's End Organics) that you can mix for your chicken and veggies. It's very little carbs and calories and they taste pretty good. A carrots, peas, chicken mixture is good with gravy.

-Salmon?
-Crab salad for dinner (without the cream dressing, more of a vinager and oil type dressing)?
-Turkey burgers wrapped in lettuce with onions, tomato, bell peppers, etc?

I just meant for you to make a big pot of chili beans with ground chicken instead of ground beef.

I can't have cheese either so I just leave it out when I make chicken enchiladas.

How about chicken tacos or chicken taquitos or tostadas with homemade salsa?

With a little imagination, there are many yummy dishes you can make!! [lick]

Do you have gluten sensitivity? On ABX? Otherwise, the ideas should be endless. I change it aup almost everyday unless I have leftovers. Just grab some good healthy cookbooks and you will never run out of ideas.

How about doing 5-6 smaller meals each day rather than 3 meals. That is a much healthier approach than just three big meals. You'll have more energy, feel better and probably drop a little weight (if you have the need). [Wink] Wasn't implying anything since I don't know you.
