How would I know if my kids have lyme, I have not seen one sign/symptom to suggest they would. How early would I see symptoms and what would I notice?

Some other symptoms that I have seen are headaches and loose stools.
Some children are very "whiny." They might be having headaches.

If a child complains that his stomach hurts, ask if his head hurts too.
A migraine can present with headache and digestive upset.

Growing pains can be another symptom.
Insomnia.
