I was at the derm's yesterday and asked about my peeling fingers. She told me it is a form of excema. I am curious if excema is a symptom of Lyme or one of the coinfections.

I've read that this is a form of dermatitis from exposure to soaps, detergents, cleaning products, etc.
If you haven't already, you might try using only natural soaps and cleaning products without fragrances and artificial coloring.
Better yet, wear gloves when you wash dishes and clean. White cotton gloves can be worn under Playtex gloves to protect your hands from the glove lining.

In college, long ago - I was dx with mono but it may have been lyme and bart. The inside of my fingers, just above the hands, all nearly lost the skin for months. I had no idea what was going on.
Nutmeg has good advice. After using gloves, turn them inside out to dry. Use a clean pair of cotton liners each time. You can buy a a few pair at most pharmacies. They are called "Treatment gloves" or something similar.
For household cleaning: BioKleen and Seventh Generation are two of the cleanest brands.
Fish oil supplementation often helps skin problems.
Any skin eruption can also be a sign of liver stress. Be sure to drink enough water and be kind to your liver.
If a fungus, a mild tea tree oil salve might be of help. Califlora Calendual Gel is soothing, too.
Avoid all petroleum products. Avalon Organics has a wonderful hand lotion that is petroleum free, with some real lemon oil added. They also have a nice shower/bath gel and mild hand soaps that are petroleum free. -
