Having just been diagnosed with a high gliadin level, I now need to eat gluten-free.
I don't mind, but am wondering if anyone knows of a helpful book that discusses gluten sensitivities. I would like to learn more about this subject.
The test results shocked me.
Thanks!

Hi Leelee,
I don't have a book suggestion, but Celiac.com has alot of gluten free info/food lists.

Gluten Free for Dummies is a good place to start. Check out your local library before buying any books.
There are many recipes online. I'd suggest you stick to whole foods at first. Don't buy too many GF processed foods right off the bat-they are very expensive, often loaded with carbs, and some are just plain awful.
Until you get a handle on the diet, good basic subs for flour if you like to bake are Bob's Red Mill All-Purpose Flour & Pamela's Mix (this has dairy).
