Hi All,

I am about to embark on my first week Gluten Free. I was wondering if anyone would be willing to post their "go-to" GF recipes to get through my trial month.

I did buy some Mary's Gone Crackers snacks and a loaf of Udi bread and of course plenty of veggies.

You can use those crackers for a base of a chicken enchilada or with black bean chili. They are too loud for my ears, so putting them in just before eating softens them nicely.

Meats, veggies, rice, eggs, fruit are all naturally gluten-free. Build on that.

I liked Vans waffles, kinnikinnick bread, and Tinkyada pasta when I was gluten free.

Mary's gone crackers is good, I still eat those. I also like those rice crackers that come in pecan, almond or hazelnut flavors, still buy those, too.

Many corn chips are gluten free, so chips with guacamole and salsa are good.

Kam - I did see some threads talking about cookbooks on here; I was just curious what everyone actually ate/made [Smile]

Keebler - I found out what you meant by too loud today! Wow, they are loud crackers.

massman - I need to get some coconut oil, sounds yummy.

sixgoofykids - I did see the Tinky pasta but was hesitant. I will have to try it.

What brand are those rice crackers? Sounds awesome and just what I like.

If I had enough money: Red Bell Peppers - I could eat 5 a day. And Avocados.

That's all it would take to make me happy. I don't know why Red Bell Peppers are around a dollar a piece (organic, which I have to eat because of a liver disorder that can't handle farm chemicals) but they are so good with any meal, as a snack and just to make you feel better.

Has anyone ever grown these on an apartment deck? I think I need to turn my 8 x 6 deck into a little farm.

Gultino brand products are great tasting! I esp love their crackers.

Quinoa pasta is better (texture and taste) than rice pasta IMO.

I agree with Vans waffles- YUM!

Quinoa pasta does taste much better because is has corn in it. Many can't have corn. I would much prefer that but my ears turn upside down with it.

I have not had french toast in a long time. I never considered using GF bread..duh...thanks

McMann..when i read the part about the bell peppers cost was something that flashed in my mind.

I recall getting them for 4 for a $1.00 in CA.

I think they are $1.00 each here or more...non organic.

I tried some quinoa tabouli I found in a deli and it was as good as couscous tabouli.

I have some quinoa grain in my cabinet, so plan to make some for company. It's a good summer time treat.

ooh...we have a small garden and we're getting a TON of bell peppers off of just a few plants this year! Maybe a small veggie garden is an idea??

That's a very good idea, Joyful! I have no place to put one. My back patio (apt) is about 12 ft off the ground! Could go dig one underneath.. but it is mostly rock.

Would be great to build a bed there.. but it is so shady. I'm up against a forest.

Let's see.. how about putting a tomato plant on my front porch? arrgghh.. It would be stolen eventually.

Keebler, you could certainly grow some vegetables on your deck. Just get some good sized plastic pots (easier to carry and move), one for each pepper plant.

I've also seen hanging planters for tomatoes. Pretty wild looking, my neighbor had several last year.

I love home grown veggies!

Atkins has a kick-xxx recipe for Chicken Cordon Bleu. It's one my favorite things to make of all time. Just skip the low carb bread crumbs for the coating . Ground almonds and parmasean cheese make a killer coating. Even my husband loves this one!!

Ingredients:

4 boneless, skinless chicken breast halves (about 1 1/2 pounds)
4 ounces prosciutto, thinly sliced
4 ounces Gruyere cheese, cut in 1/2 strips
1 large egg (I typically use 3 whites, no yolk)
1/4 cup milk
1/8 cup Atkins Quick Cuisine Bake Mix (I skip this and use more almonds)
1/4 cup almonds, finely ground
1/4 cup Parmesan cheese, finely grated
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
2 tablespoons unsalted butter, melted
2 tablespoons oil
Lemon wedges for garnish
Directions:

Preheat oven to 400F.

Butterfly chicken breasts: Place each breast half on a cutting board and make a horizontal slit through the thicker side, cutting almost to the opposite side.

Open breast to form two flaps.

Place a quarter of the prosciutto and Gruyere on one side of each breast half, leaving a 1/2 border. Fold chicken over filling.

In a shallow bowl, mix egg with milk.

In a shallow plate, combine bake mix, almonds, Parmesan cheese, salt and pepper. Carefully dip each piece of chicken first in milk mixture, then in crumb mixture to coat.

Put oil and butter on baking sheet, and premelt in oven.

Place chicken on baking sheet.

Bake about 30 minutes, turning once halfway through cooking time, until lightly browned on the outside and cooked through. Serve with lemon wedges.

Ooooh, a garden, now that is an idea. Now the trick will be convincing my DH to do all the work! [Smile]

I tried some Tink penne type pasta last night and it was very good. Pleasantly surprised.

lymeinhell - thanks for the recipe. Def sounds like something we'd like.

Marz - I would love to hear how your tabouleh turns out.

I was just lamenting the other day about not being able to eat it. (The day before I went GF, I had a whole container as a farewell!)

I think tonight will have some GF natural chicken sausage sliced on a salad with feta.

So far for snacks I have been eating:
laughing cow cheese wedge on marys gone crackers herb flavor, and

lundberg honey nut rice cakes with almond butter and a touch of no sugar added apple butter - delish!
