I have become very interested in the many different suppressed benefits of saturated fats. This morning I found an interesting statement and posted it on my blog , along with the whole article. Here is the statement

"The membranes round the cells in our body are mostly fat. Saturated fats are C shaped and interlock to produce a strong membrane. Unsaturated oils are straight so don't lock together, so weaker membranes are produced, more open to infection." The rest of the article is very informative...and a bit humorous and can be found at this link

I think we need to begin looking at the basic reasons why our immune systems perhaps let spirochetes into the brain and into the cells...etc. What is deficient? The animals in the wild...compared to those kept as pets...do not get degenerative disease.

Hello,

With all that I've read through the years, I do think it's important to have enough healthy fats and essential fatty acids in our diet so our cells are given what they need so they can form a nice healthy shield around themselves. I don't think saturated fats are the answer. Most of them come from an animal source (meat, dairy, etc.) If I may suggest a very eye-opening book about the impact of consuming animal products, it's called "The China Study" by T. Colin Campbell, PhD. It's the most comprehensive study of nutrition ever conducted. [If you do decide to read it, make sure you don't skip over the Acknowledgements, Preface, Foreword and Introduction in the beginning; this will give you a really good idea of where this information is coming from, and how relevant this author is in providing this info.]

I totally agree that we need to look into what is affecting our immune systems. We live in a world of so many chemicals... in our food and in our homes. So much to consider, research, change and modify (but worth it!).

Well, BigPharma and the junk food industry seem to have totally convinced the public of the total evils of saturated fats.

Pretty sad.

Hi Massman!! Yes I thought she made some good points. Wish I could be that organized with my thoughts and be patient enough to look at things in such detail. :-)

I'm fairly sure this stuff about saturated fats being C shaped is wrong.

Looking at wikipedia:

α-Linolenic acid (O-3) with double bonds is bent
http://en.wikipedia.org/wiki/Alpha-Linolenic_acid

Lauric acid is straight, and saturated.
http://en.wikipedia.org/wiki/Lauric_acid

I generally agree with saturated fats being good for health though.

I read your message last night about the shapes of the fats and then went to watch my new DVD by Sally Fallon "The Oiling Of America". She actually mentioned that saturated fats were straight shaped. I thought that was coincidental.

I'll have to be on the lookout for more info concerning immunity and how the different fats may affect it. Thanks for pointing that out

Re: Denise Minger's critique of Campbell's "China Study" book, linked above.

Dr. Campbell has responded at length to her analysis. You can read what he says here:
Campbell response on VegSource

In summary, she fails to see the whole picture and incorrectly interprets the data. Interpreting such a large amount of data is complex and finicky work and looking at just individual parts instead of the whole can lead a person to see what they want to see instead of the truth. Avoiding personal bias is what makes good science, but it is certainly difficult to do.

You're right...it is difficult to do which is why I think it makes sense to look at the many cultures which ate animals and animal products, among other unprocessed foods. They were of robust health and of sound mind.Heart disease and other degenerative diseases became popular when the processed vegetable oils and other processed foods came on the scene. I think that the book Nutrition and Physical Degeneration is a superb anthropological view....a true to life study of what foods make us healthy and what foods make us sick... http://tinyurl.com/33g9qk5
The experiences of our ancestors tells us the story we need to hear.

Daystar, thx for starting this thread.
I'm most grateful to Tammy N. for suggesting Dr Campbell's book and sillia for sharing his sound response to Minger's poking.
