Randibear, I can so relate to your wanting to have something different to eat. I'm limited with energy so my chicken recipes are super simple:
Rosemary Chicken Remove the skin and visible fat from a whole chicken then put it in a crockpot breast side up. Sprinkle with fresh or dry rosemary. Cook on low for 8 hours or high for 5 hours.
Lemon Chicken Place chicken breasts on a baking sheet. Grate lemon zest onto the breasts. Cut lemon into wedges and squeeze lemon juice onto the chicken. Sprinkle with pepper and bake at 350 for 30 to 35 minutes until done.

Here's a few super easy ones and they are all gluten free as well.
Crock Pot method - can be done in oven too. I just prefer to throw it all in the crock pot in the morning so its ready at dinner. These are all made with chicken breasts.
Put chicken in crock pot and cover with a jar of salsa. Let simmer all day. I serve this over rice.
Chicken in crock pot with jar of spaghetti sauce - let cook all day - 30 min before you are ready to eat, put shredded mozzarella cheese over the top to let it melt.
Chicken in crock pot with Progresso chicken broth (the one in the blue box container is gluten free). Add rice and some grated ginger. Let simmer all day. This one is good for upset tummy days or cold weather.

One of my favorites is Salsa Chicken. Place frozen chicken breasts or tenders (tenders cook faster) on a baking sheet, poor salsa on top (mild, hot, green, whatever sounds good!). When the chicken is almost done add some shredded chedder cheese on top. Yum! Good with brown rice and veggies.
You can also bake chicken in foil packets. Put a little olive oil on the chicken and sprinkle some italian seasoning or any premixed seasoning on top. Bake alone or with vegetables and potatoes.
Don't forget your pork roasts, pork tenderloins, and beef roasts. Eating chicken all the time gets boring. And leftovers are good!

I don't know if you have any dietary concerns that would render this recipe useless, but this is one of our favorites.
Put your chicken of choice inside a foil packet. Top with slices of lemons, onions and tomatoes. Add sliced black olives if you like those. Pour Italian salad dressing over the chicken, seal the foil packet and bake. 350 for about 30 minutes usually gets the job done for boneless, with longer time needed for bone-in chicken.
This recipe is so moist, and has tons of flavor!!!
